COMMERCIAL DESCRIPTION
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

UPDATED: OCT 29, 2021 [Tasting - Ceresbyen, Aarhus] [Vintage 2014] Aroma: Green apples, stone fruits, slightly funky, oak, dusty and mild yeast Appearance: Golden amber orange with medium slowly disappearing white head Taste: Mildly sweet and moderately acidic, mild stone fruits, lots of green apple vinegar, malty, dusty, oak and yeast Mouthfeel: Watery texture with mild carbonation Overall: Too much vinegar in the taste. Still an interesting beer for sure :)

UPDATED: JUL 12, 2020 Pours a cloudy, deep, brown'ish amber coloration with a medium, frothy head that soon fades to a thing ring inside the glass and slightly visible carbonation. Smells of light biscuity malt and estery and hoppy fruit notes of green apple, apricot, grapefruit and white grape, as well as hints of blue cheese funk, rose petals and oak. Taste is an excellent balance of light biscuity malt, slighty tart and estery yeast and somewhat zesty hop notes of green apple, apricot, pink grapefruit, tangerine, white grape and peach, with some flowery accents, a distinct, somewhat tannic oak presence and pretty light blue cheese funk. Finishes semi-dry with a light bitterness, medium acidity and some pink grapefruit, white grape, peach and tannic oak lingering in the aftertaste. Smooth mouthfeel with a medium body and carbonation. While I wasn't a huge fan of Cuvée Saint Gilloise, their other dry-hopped Lambic, I actually rather enjoyed this one due to the hops feeling more fruity and zesty here and not being quite as floral and earthy, intermingling very harmoniously with the esters and acidity to the point where you almost can't tell anymore where the fruity esters and lactic acidity end and and the fruity, zesty hops begin, although there clearly are some very distinct white grape and peach notes to this which, along with the oaky tannins a and dry character, almost evokes a certain white wine feel here, while the funk is somewhat soft and mild, but still distinct in its own way. A very unique and unusual, quite hoppy, Lambic that feels rather light and refreshing, but still has a good, soft complexity and sublime balance of sweetness, bitterness and acidity, with an intoxicating aroma of rose petals, citrus fruit and oaky, tannic funk.
