COMMERCIAL DESCRIPTION
This is a reconstruction of the first Bavarian dark lager, adopted from a recipe circa 1550. It's a barley-only brew, because in 1516 the first version of the German Beer Purity Law took effect, making it illegal to brew with anything other than water, barley and hops. Technology at the time dictated floor-malting and inhomogeneous direct-fired kilning, which we're replicating by using a combination of malts ranging from pale to roasted, and a good portion of smoked malt.

Poured from can dated 2/28/18 mahagony with a fluffy tan head. Aroma is caramel malt light smoke brown bread toffee. Taste is rich creamy caramel toffee Smokey malt nice mouth feel. This is pretty amazing and well crafted.

sample at jacks abby, sweet and molasses with some caramel. Caramel aroma, sticky flavor. sweetness not balanced but slightly attacked by some grassy hops.

4 oz pour on draft at Jack's Abby. Dark brownish with beige to light tan head. Aromas of roast, light smoke. Tastes of roast, malt, light smoke, caramel, light dark fruit. Light body with a dry finish.

Pours deep mahogany into a shaker. Mocha head with good retention recedes to skim surface. Dark caramel and mild smoke aromas. Soft with smoky bacon and caramel upfront with a dry, mild earthy hop in the medium length finish.

UPDATED: APR 23, 2018 Dawn of the Dunkel is an outstanding beer. Malty with a very slight Smokey touch. Very smooth with a creamy mouth feel. A nice tan head too. Jack’s nailed it on this one. Get one if you can. Prost!

UPDATED: OCT 21, 2019 Pours dark mahogany with thick, sticky head. Aroma is smoke, roast and molasses. Taste starts sweet caramel and nuttiness, building to coffee and roast. Finish is smooth hazelnut. An outstanding take on a dunkel. Very flavorful, full-bodied and well-balanced.
