COMMERCIAL DESCRIPTION
You might not expect a Saison in winter. But the enemy didn’t expect Washington to cross the icy Delaware, either. Expectations be damned, we say. We’re sneaking up on winter with a boatload of bravado and this Belgian-style farmhouse ale. Dry hopped with whole organic cardamom pods, our Saison has an assertive spiciness. In your face, winter.

DATE: June 24, 2018.... OCCASION: celebrating Michael's 9U undefeated championship run in Branchburg... GLASSWARE: La Fin du Monde tulip... though I was having this a bit out of season, but the light golden body--rife with bubbles and a sizzling, finger-width of white head suggests this could work in the early summer as well... in fact, the swirling storm of effervescence suggests this is still quite fresh... banana, clove, Saaz hops, white grapes, pepper, peppermint, and cardamom, which gives this a unique aspect... in addition, the yeasty esters create a nice floral arrangement that invites the next sip... speaking of which, each sip is soft, somewhat thin, but effervescent at the throat, with enough texture at the teeth to suggest reasonable hop bitterness... refreshing, subtly sneaky at 6.2% ABV... outside the season it was intended for, the flavor profile shoulders its yeast well, creating a florid sweetness, flirting with a honeyed bourbon but settling on a smooth, blunted spiciness that doesn't distinguish itself much from the other saisons that are in year-round circulation... still, not one I would refuse if handed to me, and a welcome offering in the break box mix pack I got this in...

Can pour into pub glass from Greg & Jane's Beer and Wine. Appearance is clear, very pale yellow with tons of sparkle (very champagne-like on both accounts) with fizzy, finger-plus width white foamy head with excellent retention and no lacing. Aroma is champagne yeast, tart fruit, cardboard. Taste is champagne-like tart fruit, yeast, fruity esters, Pilsner/cracker malts. Palate is light-to-medium bodied with thin, slippery texture, surprisingly soft-to-average carbonation and dry finish as taste. Overall, light and champagne-like. Didn't get much in the way of cardamom.

Aroma is pleasant - fruity and mildly funky. Then I took a sip. What the everloving fuck. This weird, chemical taste fading into bitterness with an excessively sweet for the style malt backbone. If you're going to spice a beer, fine, but you don't have to scour India for every cardamom pod there is and jam them all in the goddamn fermenter. This is really bad.

UPDATED: MAR 17, 2018 Pale yellow body, partly cloudy. Thin white head. Mild, sweet aroma. A little grassy. Medium mouthfeel; decent carbonation. Semi-sweet flavor with a touch of citrus fades to a slightly bitter finish. Not bad.

A mellow yellow haze with a tight head of thin and short-lived white foam. Very yeasty and breast like pizza dough. A very subtle tang like lemon from the yeast strain. An easygoing dryness in the finish.
