Rhubarb, tartness, mild funky nose. Later some wild strawberry notes in flavor. Sweeter than I expected, but delicious still.

Pours darker, murkier, than I have seen from 3F before. An orangy reddish hue, like a dusty clementine peel. Thin white ring of froth, not much carbonation.
The smell is classic 3F, very apricot forward. Loads of pear as well. The cascade of fruit continues: pineapple, mango, persimmons, lemon — sherberty. A bit of lilac and rose water. The aged lambic does show up in the form of dusty, cobwebby, woody attic smell that pervades the nose. Hints of ginger, lemongrass, sage, maybe a bit of jalapeno? It's an invigorating smell, like a zinger tea.
On the tongue it's surprisingly mellow. Again, I'm reminded of tea. This time it's more like a Yunnan black tea, with that fuller body and light caramelly sweetness. Chewy, marshmallowy. Zesty, a lighter sourness, softened by a topping of fresh whipped cream, like lemon meringue pie. Browned buttery crust.
The texture is quite flat, but has just enough tingle to kick up the sharper flavors. The ending has a touch of bitterness — like artichoke. An aftertaste of wild strawberries.
At first I was a bit lukewarm on this (by 3F standards), but the more I drink it the more I peel back the layers of this complex brew. There is so much to uncover, I feel like I've barely scratched the surface and I've made my way through the bottle easily. A mesmerizing brew.
