COMMERCIAL DESCRIPTION
Assemblage n° 86 • seizoen 17|18 # of bottles: 582 Brouwerij 3 Fonteinen “Speling van het Lot” (Twist of Fate) is a series of small batch experimental brews, barrel maturations, fruit macerations and/or blends. This 9th version features a range of strawberry maceration iterations aiming at balancing the intense fruitiness of strawberries with the subtleties of traditional lambic while minimising the unpleasant phenolic characteristics of the small pits. For this fruit lambic we macerated strawberries (30%) and cherries (70%) separately on two different oak barrels for a couple of few weeks. The fruit lambics were then blended and put on a 400 liter oak barrel for another 6 months of ageing and bottled afterwards. The fruit intensity is 500 grams of fruit per liter of bottled Bio Aardbei + Kriek. 100% 3 Fonteinen lambic.

UPDATED: NOV 24, 2020 Bottle at Baileys Taproom. Pours a reddish orange hue with a medium white head. A big sour cherry woody nose. More huge sweet and tart cherries, big woody sawdust flavors, lactic. Damn big, bursting flavors.

UPDATED: MAR 1, 2020 Transparent rim over darker rosé-coloured beer, end of bottle serious deposit in suspension. (Sour) cherry, hints at raspberry (rather than strawberry), faint strawbales or horse box; rosepetals. After a long warming up, a hint of strawberry. Very sour fruitflavour, sour cherries completely overpowering the strawberries. Lemon, lactic acid. Serious acidburn and -thinning. Bit fruitslick, still. Not the best Twist of Fate. Strawberries are completely overwhelmed by the rest.

The aroma is fruity with sour and tart cherries, raspberries, hints of strawberries, hints of balsamic vinegar, some wood and mild funk. Medium body with an average carbonation, a medium-heavy acidity and a light tartness. The flavor starts with acidic funk, some balsamic vinegar, wood, sour dark cherries, faint strawberry notes, mild wood, unripe raspberries and citric notes. Finishes dry with some residual sourness, hints of cherries and some wood. Overall crisp and fruity but the acidity overshadows the fruits and in particular the strawberries. Aroma: 8 Appearance: 4 Taste: 8 Palate: 4 Overall: 17
