2015 Backlog. Pours a light golden body with white lacing. Mouthfeel is medium bodied with notes of fresh yeast, hay, lemon, sugar, light malt, spice and pear.

On tap @ SL. Pours a light gold color, with a large dense off-white head that fades slowly. The aroma has banana, bready Belgian yeast, along with tons of that lemon and clove. Flavor has sweet citrusy lemon and floral notes and a more pronounced spicy yeast element. Moderate malty sweetness, retaining some of the original Tripel character, but primarily zesty and hoppy with a dry, refreshing finish. Crisp, medium body, medium carbonation, finish is slightly sticky.

June 20th, 2013 - The Allagash Yakuza has a sinister name, but a beautiful flavor. The aroma’s wonderful too, effusive with lemon peel, vanilla bean, custard and a slight acidic-sweetness reminiscent of champagne. The flavor trumps the aroma though, repeating the light lemon, champagne and custard flavors, but adding in a blended citrus flavor with blood orange, and a light, spritz body of saison grains and dry pear. This is phenomenal, unique and delicious - all under the guise of a brutal, machismo member of the underworld.

On tap at Willibrew: Pours a clear golden with a frothy white head. Little lacing, no head retention. Aroma of melon, oranges, coriander, earth, fall leaves, belgian yeast and funk. Taste is a bit hop forward (odd for the style) and is peppery, lemon, and funk. Light body, full flavor, perfect carbonation. This is super enjoyable.

Tangy sweet melon honeydew wonderful clarity sparkle light golden. Haven’t tasted this good and dry example of this yeast in a while.

Great tripel with a very hoppy characteristic. Fresh japanese hops make it as it is. Great one.

On draught at Deep Ellum, Summer 2012
Small amount of white head tops a somewhat hazy body. Retention is poor, certainly nothing like the regular trippel.
Plenty of lemon and orange in the nose, with some earthy, leafy, rustic/raw hoppiness. Certainly fresh, no denying that, but either the keg was just way too shaken up (unlikely at Deep Ellum) or rather this just was very unfiltered and the hop particles have stubbornly not dropped out. Anyways, it’s very raw and aided by plentiful house yeast esters, creating a milkshake of hop acid, citrus, resin and bananan/clove. Medium strength, no alcohol felt, at least.
Quite bitter and acidic, though the yeast, plentiful supple maltiness that is Allagash trippel and soft texture to the body all help allay the hop bite. The hops are good, I guess, but I just think that trippels, for the most part, are so much about the malt and yeast that there’s just very little room for high alpha hoppiness. May just be not keeping an open mind, but anyways, this didn’t quite mesh for me.

A- pours a straw yellow with a faint off white head and no lacing. S- Belgium yeast, straw, Granny Smith apple, raw olive, oregano, basil, clove, green pepper, light honeydew melon, and citrus blossom. M- light to medium sticky body with a sweet light to medium palate. Mild carbonation. T- Malty and citrus in the beginning. Melon and pear. Some dough. Wicked prominent bubble gum in the middle. Moves towards clove, mild cinnamon and orange. Ending is clean and efficient. Mostly bitter hops and grasses with some lingering grapefruit.

Radiant hazy yellow gold some lace and head. Aroma is fresh yeast, slight tart funk, not ripe pear fruits. Flavor is malty & fruity sweet with skins, light yeast, late spice, Creamy mouthfeel. It’s unusual in look and body but really pleasant.
