COMMERCIAL DESCRIPTION
20lbs of White Wheat and Farro from Hayden Flour Mills. 1lbs of Sel Gris Salt from Go LBS Salt in Gilbert, Coriander from Somewhere in Thyme in Gilbert. This is a 1000 year old style of beer! Gose (Goze-uh) takes its name from the River Gose that runs through the mining town of Goslar, Germany. All of the minerals from the mining process made its way to the river and the breweries in the town had to compensate for the mineral laden water (mostly salt). Eventually the style moved to Leipziger, Germany where it became all the rage. We, well, we did it the Wilderness way, with a 2 day sour mash and the best salt and coriander from awesome local companies. Look for the amazing French grey sea salt, or Sel Gris, which is harvested using traditional Celtic methods. This prized process is done entirely by hand, using only wooden tools.

Pale golden colour, firm white head. Fruity aroma, wild funk, wheat, salty smell (didn’t know it was possible for something to smell so salty). Salty flavour, wheat, sour hints.

On draft at AZ Wilderness. Hazy yellow body with a thin, wispy collar. Huge funk aroma, with lemon juice, light spice, sea salt. Light in body and refreshing, despite the intense sourness and aggressiveness. Well done indeed. AZW is doing some nice work.

Draft & Growler. Very interesting initial aroma. Pale gold appearance, a little hazy. Taste is initially a bit of sour then salty and malt finish. Overall very interesting beer for anyone who likes sours.

For the style, this is one of the better ones I’ve had. Faint earthy citrus aroma. Very light yellow, almost lemonade color. Light watery palate with a certain fluidity to it. A touch of sour, flower, citrus and salt. Not bad.
