COMMERCIAL DESCRIPTION
The sweet matches the heat in this brilliant wine with a kick. We started with Michigan wildflower honey and a ton of Michigan cherry juice. Once fermented, we added a lion’s share of red chipotle peppers to give it a smokey character and medium spice level. A fantastic wine for dessert. Try pairing this with rich chocolate cake.

UPDATED: DEC 13, 2021 29 October 2021. Third Great Timternational Beer Geek Tasting. Cheers to the Ghent beer crew! Clear red, no head. Aroma of red bell pepper, paprika, olive oil, cherry, raspberry, dark honey. Taste has sweet bell pepper, cherry, honey, some strawberry, gently spicy. Peppery finish with burning chili, smoky paprika but soothed by the sweet cherry. Heating alcohol still. Medium body, oily texture, flat carbonation. Very interesting, never tasted something like this before.

Man, B. Nektar is firing on all cylinders. This mead has a prominent chipotle nose, with aromas of smoky pepper flesh, spicy pepper heat, and rich cherry preserves. On the palate, again, the balance is impeccable, with the heat and flavor of the chipotle balancing the sweetness and richness of the cherry which gives the mead a flavor of cherry preserves. It's full bodied, rich and chewy, but isn't remotely cloying because of the high acidity and moderate spiciness. In the glass, it's clear in appearance and brick red in color. Overall, this is just excellent. It has just the right amount of heat for me; it's certainly noticeable and has a mild burning character, but the sweetness keeps it at bay. So good!

UPDATED: NOV 14, 2019 Clear amber-brownish color without head. Cherry, smoky, wood, slightly sweet, caramel aroma. Sweet honey, cherry, caramel, boozy, slightly sour, warm with hints of chipotle flavor. Sweet and warm, smoky and spicy caramel, honey, cherry palate in one. Heavy body. Absolutely convinced me!

UPDATED: NOV 13, 2019 Tap at KEG. Deep red pour, thin white head. Nose is big spicy and smoky chili, low honey sweetness, some tartish fruity touch. Taste is tart cherries upfront, then some honey appears but only with a nicely balanced sweetness, nothing overwhelming. Then comes the chili, with suberb balanced smoky and spicy notes that last suppper strong into the finish. A true sipper, but more like because of the spicyness and the many layers that should be investigated and thoroughly enjoyed, rather than due to its big body.

UPDATED: JUN 24, 2019 Bouteille 375ml. De couleur acajou, le tout laissant un léger filament huileux doré au verre. Arôme est plaisant alternant sur des effluves douces de mielleux et de fleurs avec un ajout fruité de cerise. En rétro, un bouquet fumé subtile entrecoupe ce côté organique du miel auquel se mêle une légère pointe de piment. Palais est doux, cloying, miel fleuri agrémenté par une petite touche aigrelette de cerise et un effet fumé pimenté très plaisant. L'effet de chaleur du piment est modéré et arrive doucement après chaque gorgée.

UPDATED: JAN 4, 2019 375ml bottle @Matt's. Pours a clear bright reddish pink colour with no head. Nose is light cherries with a light spicy pepper note. Flavour is lovely blend of sweet floral honey, light cherries, and rounding out with a somewhat tangy spicy pepper quality. Medium bodied, no carbonation, and a moderately high sweetness with a nice spicy heat.

UPDATED: DEC 30, 2018 Bottle at Cgravie's: Poured a reddish color with a white head. Aroma is cherry with spicy pepper. Taste is spicy pepper, cinnamon and cherry, works great together as it brings heat and sweet.

Red colour. The aroma is very light, it takes a few minutes to show some chipotle. The flavour is moderately sweet, the spice blends perfectly with the alcohol warmth and mild fruit juice.
Very good.
