COMMERCIAL DESCRIPTION
Dark Hollow blends the miracle of two crafts--brewing and distillation--to create a work greater than the sum of its parts. An Imperial Stout has been aged in charred American oak bourbon barrels still dripping with uncut whiskey. For 100 days the young beer patiently breathes in and out of the wood, gaining complexity, character, and serious attitude. This ale is always bottle conditioned and can be enjoyed immediately upon its release from the brewery...or five years later, when you dust off the last vintage bottle from your cellar to share with good company.

UPDATED: NOV 19, 2021 Based on other reviews, the carbonation on these seems to be all over the map. 4-pack of cans from Costco, poured into the brandy snifter I use for all tastings: almost no carbonation. No head, a few bubbles. That said, it's a nice medium-thick mouthfeel. The nose is immediately oak and bourbon barrel, then redfruit and licorice. The 10% rapidly overcomes my taste buds, but there's also oakiness and bourbon barrel in there, and then some generic stout flavor and nothing more but alcohol warmth in the throat. Pretty good overall!

UPDATED: APR 6, 2020 750ml bottle from Elise, aged for 5 or so years, maybe more. Cork said best by August 2015, drank in April 2020 and it has aged quite well. Really clean by today's pastry standards, the barrel tones are nice, the malts have cleaned up some and are smooth and easy. Sweet bourbon candy caramel in the finish. Tobacco, chocolate, oak. Great.

UPDATED: AUG 25, 2019 At a party. In a paper cup so couldn't really see, big (tan) head may have been due to shaking on ride there. Aroma was cocoa, roast malt, cola, hint of coffee. Taste was similar. hint of hops. Smooth. Went well with dessert items.

UPDATED: MAR 19, 2019 Bottle shared at a tasting at Dancing Camel. Bought at the Beer Run, Charlottesville, VA in April 2016. Black with a tan head. Cocoa and coconut aroma, sweet, milky, chocolate milk, a little alcoholic taste. Full-bodied, smiith texture, a little alcoholic finish. Not too complex yet fun.

UPDATED: JAN 22, 2019 A pretty lifeless dark pour.. not much head.. thin lacing.. Incredible aroma.. dark fruit, malt, boozy, bourbon.. I'd wear it as a cologne. The taste is pretty magical.. oak, alcohol, coffee, chocolate...a hint of weird rye-like bitter is the only negative and the palate is a little thinner than I thought it'd be.. but it tastes exceptional. Almost an all-time great.

UPDATED: DEC 27, 2018 Bottle @ Assentoft tasting. Nice head with good duration. Color is black. Aroma and taste are rich roast malt, chocolate, coffee, caramel, nuts, hops and has a nice roasty finish.
