COMMERCIAL DESCRIPTION
Based on our beloved Tank 7, this astonishing saison is assertively dry-hopped with Amarillo, Calypso and Citra hops, then bottle conditioned with Brettanomyces, a strain of wild yeast that imparts a distinctive earthy quality. Warm cellared for three months, the Brett character is deliciously apparent on release, but it’s just getting started.

UPDATED: MAR 13, 2021 Just a little hazy with huge foamy head. Big bretty, floral hop aroma. Tank 7 dry bitter saison and fruity saison with loads of brett. Dry bitter finish with fruity brett. I love tank 7 and this is a bigger version of it. I like the long bitter dry hopped twist.

Bottle (1 pint 9.4 oz.). Pours orange-amber with thick white head and substantial lacing. Pepper and herb aroma. Pepper and herbs with cracker malt underneath. Dry, peppery finish. Medium body.

UPDATED: APR 25, 2019 2019/04/25 - Pours a hazy golden straw colour with a massive, foamy, white head that slowly reduces and leaves moderate lacing. Aroma is fruit (citrus, stonefruit, light tropical, apple), vinous notes, yeast, brett funk, grass and earthy/herbal notes. Taste is brett funk, pepper, earthy/herbal notes, yeast, citrus, apple, stonefruit, white wine notes and soap. Mouthfeel is medium with sharp carbonation and a dry, lightly astringent finish. Really nicely put together. Complex, but clean.
