UPDATED: DEC 30, 2021 37cl bottle. It pours a clean golden color with a small white head. Aroma is grassy and oaky, little lemon and funk. Taste is also mildly acidic and woody, oaky, dusty, with little citrus and funk notes. Medium bodied with good carbonation. Overall, quite simple and easy drinking.

UPDATED: MAY 26, 2021 750ml bottle. Poured a hazy golden color with a medium sized head. Citrus, funkiness, tart fruits, woody notes, and 'musty'.

UPDATED: JAN 31, 2020 Pours slightly hazy yellow with medium white head. Lemon zest, oak, tart, nice sour, minerals.

UPDATED: JAN 31, 2020 Bottle. Clear golden, small white head. Wood, hay, funk, some sweetness, minerals. Fairly subtile and easy going.

UPDATED: OCT 26, 2019 Flaska på Pistolet, Bryssel. Vintage 2018. Guldig med vit krona. Frisk, pigg, något skarpare. Mycket stall, funk, citron och citronskal. Lätt bitande syra, något spritsig med äppelkärnor och äppelskal. Mycket gott och uppfriskande! Drickvänligt.

UPDATED: OCT 25, 2019 Bottle. Cloudy yellow pour with a white head. Mild barnyard bouquet. Good carbonation, with big bright lemon zest, citrus, barnyard, and funk. Subtle barrel, fortified wines, and oak. Great body and mouthfeel.

UPDATED: SEP 13, 2019 375 ml bottle at Pistolet Original. A light orange pour with little carbonation some apple and white wine.

UPDATED: AUG 4, 2019 Batch 1. Pours a hazy gold with small white head. The aroma is strong funk, oak, brandy, floral. Medium body, strong brandy, oak, funky, nice tartness, enjoyed this.

UPDATED: AUG 1, 2019 Bottle at pistolet enjoyed with some lunch while on 2019 Never to be Topped (challenge to forever do better) Belgium trip with Ian, Jason and James. I'll be honest not sure that I could discern how the specific percentages of each year of lambic changed the taste although there did seem to be a bit more funk and lemon but was great to eat outside the restaurant with a sandwich. Definitely worth a visit for both the unique beer and a snack.

UPDATED: MAY 7, 2019 At Pistolet Sablon. Pours a lightly hazy golden color with lively carbonation. Large white head. Nose and flavor of oak, Cantillon funk, minerals, lemon juice, and sour wood. Light bodied and easy to crush. Great first beer and sandwich of the trip care of the chill folks at Pistolet.
