COMMERCIAL DESCRIPTION
The base beer for Mutualism is a pilsner brewed using local wheat and grits from Georgia‐based DaySpring Farms. The finished pilsner underwent a secondary fermentation with a blend of both Creature Comforts’ and Jester King’s house-mixedcultures of yeast and bacteria. The beer was then bottle conditioned for five months.

UPDATED: JUN 27, 2019 2019 Release. Appearance: Pours a straw-hued body, hazed with a collapsing, ultimately slender, white head. Smell: Funky, tart-scented and fruity with an appealing minerality. Touches of pils, hewn hay and dough with a veneer of bentonite clay. Smashed white/green grapes, lightly spiced with a drizzle of tropical fruit juices (pulls in more funkiness, more salinity as you reach the dregs at the bottom). Taste: Thinned pils, a little sprinkling of grits in the grist. Minimally sweet. Bright, freshly-juiced lemon with some slender florals and splashes of white wine, rosewater and a wrung out, sweaty ole horseblanket. Appealing acidity throughout. Hints of maize paste, hay, dough again as you near the dry, less-than-crisp finish. Mouthfeel: Medium-light body. Medium-low carbonation. Would've liked it to be a bit more spritely. Overall: Quite pleasing, enjoyable. Plenty flavorful but also keenly drinkable.

At Hopishop 2017. Aroma of malt, tart and horseblanket, what is this? Taste has tart, horseblanket, old grain, malt, white grape and oak. Reminds me of a nice brett ale, would not have guessed this is a pilsner. Best pils I ever had.

Topbier.
