COMMERCIAL DESCRIPTION
Our American version of a Belgian Wheat Ale. Traditionally unfiltered, but in this case, unusually clear. Along with the Wheat Malts and Organic Oats, you’ll find Hints (yes… Hints, not bombastic amounts) of Coriander, Lavender, and Bitter Orange peel, which gives it a slight Lemony Touch. We use aged hops, so there is very low levels of hops in both taste and aroma. Our Wit beer helps to sooth that summer heat away, just like a domestique (helper) that brings water and supplies from the support cars up through the peloton to the front end riders for relief.

Draft at Whole Foods Champions. Pours very light yellow. Not much head or nose. Not yeasty enough for a true Belgian wit but fairly drinkable (and forgettable.)

Can from specs. Tons of off-white bubbles. Hazy golden. Aroma of white cake (with icing) and sweet witbier. Taste is fruity and grainy; not more than barely sweet or bitter in any discernible way, and slightly metallic. Medium bodied.

Smells light and fruity but the body is heavy ripe banana. Its a little sour. The pour is deep golden and clear without head.

Can. Pours a clear, slightly hazy gold with a high, fine-grained, pillowy, off-white head. Nose is toast, roses, oranges, cardamom, white raisins, amd frankincense; quite perfumed for a wit. Quite heavy on the tongue; citrus forward with tangerine and orange, then comes in with toasted grain and a flinty minerality. The heaviness is done well; it’s just unusual for me to taste a wit with this much authority. Lotsa backbone on this one. Finish is long and acidic, but there’s a strong thread of honey-caramel malt in it. Good, and somehow uniquely Texan.

On tap at Mellow Mushroom. Pours a clear yellow orange with no head. The aroma is clove and banana. Medium mouthfeel with light citrus, wheat, and clove with light dry finish. Decent.

Tap at the mellow mushroom in spring. The look is very clear, no head, golden in color. The smell is wheat, spice, ash, and coriander. The taste is ash tray, spice, dirty, and just seems slightly off.
