COMMERCIAL DESCRIPTION
Defying Gravity represents an ongoing exploration and expansion of the universe of sour beer. Propelled by three distinct fermentations, these unblended ales defy gravity, and will transport your consciousness to a new reality. Cape Canaveral, our maiden excursion in the series, is a strong sour ale boasting an enviable cargo of papaya, with esters of grapefruit and pineapple from our tamed microflora.

Pours a clear golden orange on tap with thin ring of bubbly white head that dissipates quickly to leave light lace. Aroma of big sweet fruit notes over a light lactic acidity. Taste follows, like a tropical sour candy, sweet and slightly sour, fruit notes abound. Booze is incredibly well hidden, light carbonation, a tad too sweet for me.

Tap, ADT. Mostly clear gold with little or no head. Tropical and tart citrus fruit aromas and flavors. Medium full body with light carbonation and sour fruit finish with some bitterness on the end. Noticeable alcohol warmth, but I'd never guess it was 14%, watch out.

Bright yellow and cloudy pour at Spero in Charleston. No head. Can barely taste the high abv in this. Orange lemon tangerine and tangy sour flavors. So smooth. Fantastic.
