COMMERCIAL DESCRIPTION
Apple lambic. In Gooikse velden rijpen de mooiste appels die samen met lambiek vergisten tot de Pajotse cider. Deze variëteit van apples levert intense extra smaak aan de lambiek die vergist op houten vaten. 45kg op 100 liter jonge lambiek. (Malus Domestica = the garden apple, in this case Elstar)

UPDATED: DEC 21, 2021 Bottle shared with Dimitar. Golden body, white head. Big aroma, sour, minerally, green apples. Juicy taste, green apples, light maltiness, not too funky, nice balance. Overall a tasty fruit lambic by all means! Mthough, so will try again hopefully at some point.

UPDATED: NOV 26, 2021 --Bottled, from Systembolaget. -- Clear pale golden, lively head. Funky barnyard dominate the citric nose. BOne dry with slender body and crisp, spritzy mouthfeel. Funky barnyard, mild citric acid, notes of minerally cider. Mild old hay bitterness. Complex and wonderful, really great lambic - carefully flavoured.

UPDATED: JUN 11, 2021 A 750ml corked and caged bottle, 2018 vintage, with a best before date of August 2041. Poured into a De Cam stemmed glass. It was a slow gusher upon popping the cork, but it poured a nice hazy golden straw yellow colour with a slightly more than one finger pillowy fluffy white head that had good retention, while leaving only some sparse lacing. Aromas tart, green apple, apple skin, oak, lemon zest, peach, hay and funk. Tastes moderately sour, tart, green apple, apple skin, oak, lemon, citrus sherbet, funk, with light stone fruit notes. Dry, medium bodied with high carbonation. Overall very enjoyable and easy to drink with a good balance of fruit, sour and funk.

UPDATED: JUN 9, 2021 Bottle from Etre, Just a touch of haze in a light golden elixir with a huge frothy white head that persists. Huge funky musty nose as soon as I wrangle off the cork. Lightly tart flavor with hints of pomme fruit, softer palette than the nose suggested. Very nice.

UPDATED: MAY 28, 2021 Poured from a 750 ml bottle. Aroma is fairly apple forward, with tart green apple notes and some tannic red apples as well. Faint pear and lemon notes. Light grain notes and hints of alcohol. Light earthy, herbal, musty notes and hints of oak. Pours a hazy, golden orange with a medium large, fairly thick, frothy, white head that recedes quickly to a small film that lingers for a bit on the edges. No lacing and faint legs. Flavor is somewhat acidic and a bit sharp with light sweetness and faint grain notes. Low bitterness, alcohol and oak notes. Fairly strong apple cider notes with tannins and apple skin notes. Faint lemon, pear and stone fruit notes. Light earthy, herbal and musty character. Mouthfeel is medium bodied with high carbonation. Low astringency and low alcohol warmth. Overall, a solid apple lambic. It's a bit acidic and tannic for my preferences, but it's not over the top. Good base lambic notes, but I would like a bit more musty and herbal notes.
