COMMERCIAL DESCRIPTION
This saison-esque science project gets complexity and fermentable sugars from the addition of two unique white wine grapes, sourced with our friends at Alexandria Nicole Cellars in Prosser, Washington. The first addition is the must of viognier grapes that have been infected with a benevolent fungus called botrytis. This ’noble rot’ reduces the water content in the grapes while magnifying their sweetness and complexity. The second is a pinot gris intensified by a process called ’dropping fruit,’ where large clusters of grapes are clipped to amplify the quality and distinction of those left behind. We then aged Noble Rot in one of our oak tanks for an entire year, making for a hazy ale that has a spicy white wine body and a dry, tart finish.

UPDATED: AUG 11, 2021 Bought at Smart Time Food from Grand Terrace, California for $14.99, Oak-Aged Noble Rot is a grape ale brewed with grape must crafted by Dogfish Head Craft Brewery from Milton, Delaware. The aroma of white wine, pear, and saison are noted as you drink. The appearance is gold that pours a low white head that dissipates quickly with minimal retention and no lacing. When held up to light, the color shifts to a straw yellow. The alcohol content is 9%. Grape must lightly tarts the take, imparts a white wine flavor, musty to the finish, and fairly sweetens the complexion. Pear compliments the white wine, and juicy to the body. Saison blends with the grapes and pear, and slightly spiced by clove. Vanilla subtly creams the grape and saison tandem. Green apples are sensible during the relatively dry finish, where oak gives off a woodsy touch. Oak-Aged Noble Rot is an alluring grape ale. Grape must, pear, saison, clove, vanilla, green apples, and oak blend into a delectable craft beer. The barrel aging added more grape must, yet the grape must is fairly and tolerably sweet combining with the pear and saison. The saison and vanilla eases the drink, and brightened by green apples. The musty grape, saison, and clove leaves a lasting impression as the finish wanes. I loved drinking this brew, and enjoyed bringing the noble rot from wine into craft beer. Cheers. Prost. Capped 750 from La Riviera. Pours light gold with a white head. Aroma of dry white grapes with an oak note. Med body or so. It's dry. It's white grape. There's some oak that's slightly musty. Something that might be botrytis fungus. Or something else. Very light breadiness in support. Indeed it is coming across as something very like a dry white wine. Interesting. Tasty. Perhaps one of DFH's better adventures.

A thin white head on a clear straw body. The nose punches with ripe, slightly sour fruit with sweet biscuit malt. A beautiful blend. An array of fresh fruit notes - green apple, grapes, peach and pear are blended nicely with honey and roasted grain. A slight funk in the yeast and a very tart sourness make this a deep but refreshing and clean ale. Superior.

Pours a slightly hazy golden yellow from the bottle with a lot of carbonation and fluffy white head. Aroma of musty fruit from the grapes that fall to sweet malt, light tannins, and spicy esters. Tastes strongly of the fruit and malt, giving it a belgian-like characteristic, mild oak. Overall, a nice little specialty brew, but the oak is minimal at best.

750 ml bottle. Clear brassy gold color. Small creamy white head. Tart, yeasty nose. Sweet, yeasty, hay-like notes. Tasty, vinous flavor with oaky notes. Complex flavors abound. Vanilla, oak, pear, apple, grapes and lime zest. Dry, tangy finish is refreshing. Some warming alcohol as well. Very nicely done.

Pours out a pale straw colour with a light white head. The nose is un-fucking-real. Spice notes, floral hops, slight barrel notes, viognier is mild, a bit of funk. I could literally smell this all day. Light earthiness, mild caramel, oaky notes, leather. This beer has a ton going on. I wish the beer underneath the viognier/botrytis/oak was better.

Very good, not quite as big a revelation as normal Noble Rot but close. Still has the lovely vinous qualities of the original, but seems sweeter and a bit rougher around the edges, weird considering the BA treatment. Tasty regardless; mild saison notes of clove and grass give way to a growing wine acidity, leading to a tart, yeasty back end with tons of woodsy bitterness tempered by soft vanilla. Finishes with a flourish of viognier complexity and farmhouse mellowness. Gets better as the pint warms, bringing out more grape notes and intensifying the dryness of the oak. Not all that pretty of a beer, more fizzy and yellow than expected for a saison, but the nose is a massive dose of yeast and grape. Excellent feel, a tad boozy but fluffy enough to meet farmhouse standards. Tasty brew, likely better than it scores.

Large Format - Crystal clear pale yellow color. Has a constant stream of tiny bubbles just like I would expect on champagne. Sting taste of white wine from the oak aging. I know it’s beer but it tastes pretty damn close to a white wine.

Bottle from K&L in Redwood City, CA. Aroma is white wine, light oak, mild fruit skin funk. Taste is thin, white wine vibes. Mildly refreshing but was hoping for more rotten qualities.
