COMMERCIAL DESCRIPTION
Big Brown Ale aged on palo santo wood from Paraguay. This beer is a 12% abv, highly roasty, and malty brown ale aged on the wood of the Palo Santo tree from Paraguay. Palo Santo means "holy tree" and it's wood has been used in South American wine-making communities. We were lucky enough to get our hands on 20 blocks of the super-dense wood and the wood was added to the ageing tank after fermentation.

UPDATED: JUL 10, 2021 Bottle poured into a shaker glass (others are packed up). Black with a cocoa brown head. Aroma is caramel, chocolate, wood, a hint of booze. Initial taste is chocolate, wood, bourbon, booze. Fades to bittersweet chocolate. Incredibly smooth body and perfect carbonation. This is like a mini imperial stout. Not quite a potent but just as delicious.

UPDATED: APR 17, 2021 Indicated as bottled on 10/9/20, I have a single 12 oz bottle that was purchased weeks ago at The Cellar, the closest beer shop. Using my Buffalo Bayou snifter I see an immaculate brown body with a slim head of light tan foam. A nice nose, I determine ripe fruit, brown sugar and toffee. The glass is lifted for a drink, caramel, wheat bread, pecans, karo syrup, some woodiness and a boozy effect. I feel a bit of a burn as it goes down. Thick and potent, as good a brown ale as I have had.

UPDATED: DEC 8, 2020 Bottle. From 12 pack. Dark brown, almost black. Opaque. Slightly sweet, roasty aroma. Really good. Strong, roastey wity plenty of wood/vanilla flavor and hints of whiskey.

UPDATED: JUN 2, 2020 12-ounce bottle pours mahogany with some ruby highlights along with a tiny tan head and lacing. Aroma: dark dried fruits, molasses, cherries. Flavor: molasses, brown sugar, balsamic vinegar, burnt toast, figs, dates, prunes, raisins, brown bread, vanilla, cigar, leather, wooden char/ash, brandy, port wine, anise, black pepper. Mouthfeel: full-bodied with an oily finish.

UPDATED: DEC 31, 2019 Strong boozy brown ale that is rich in flavors. This is a solid strong beer. Complex flavors. Overall one of the better beers from Dogfish Head Brewery. Well done!

UPDATED: AUG 12, 2019 Bottle. Pours the deepest of brown, verging on black with no head. Aromas of dense toffee, black bread, wood, heavy caramel and brandy soaked dried fruits. Burnt caramel flavours, port like characters, black berries, wood, a lick of smoke and boozy Christmas plum pudding. Very rich. I get why this beer is so highly rated, but it’s a bit much for me.

UPDATED: AUG 11, 2019 12oz bottle from ES. Appearance: very dark brown with a beige head, stout like view. Aroma: caramel, roasted malt, iron, dark fruits. Taste: along the same lines, burtn wood notes. Overall: nothing complex, ok.

UPDATED: JUN 13, 2019 12 oz bottle. Pours a rich dark brown with a big dense tan head. Huge scents of malt and dark bread with a yeast hint as well. Great sour pumpernickel and raisins. Some big alcohol warmth. A low carbonation and soft mouthfeel. Awesome.
