COMMERCIAL DESCRIPTION
This is our flagship product, now in its fifth vintage. We’ve changed the name from ’Calville’ to Heirloom to reflect more clearly the heritage and complexity of the the blend. In addition to MacIntosh and Empire, Russets provide full-bodied sweetness, Calville Blanc and Esopus Spitzenburg provide acidity and citrus notes for balance, and Ashmead’s Kernel provides natural tannins for structure. Serve it with artisanal cheeses, game or dessert.

ABV: 10.0%. Clear medium orange yellow colour with virtually no head. Aroma is moderate to light heavy apple, sweet apples, wood, rich apples. Flavor is moderate to heavy sweet and light acidic with a long duration, apple, concentrated apples, rich, tart apples, light vanilla - sweet apples. Body is medium, texture is syrupy, carbonation is flat, finish feel is warming and light alcoholic. [20190802]

Bottle shared at Sunday Brunch Bee Boost. Pours a clear golden amber, no head. This is veeeeery sweet, it even lists the residual sugars on the label, 15%. Lots of sweet apples, caramel, sugar syrup, oak, the flavor profile is very nice but the sweetness makes it hard to define it.

Taste is sweet, apple syrup, apple pie, caramel, vanilla, spicy, citric hints, booze. Oily syrupy mouthfeel, full bodied, low carbonation, lingering sweet warm boozey finish. Nicely sippable.
