COMMERCIAL DESCRIPTION
This single-varietal ice cider is being aged in a French oak barrel, imparting structure and delicate spice. Northern Spy is an antique variety of apple that was one of the three most popular in America at the end of the 19th century. It has a sweetly tart flavor that is superbly enhanced by the oak. Brix after concentration: 35 Alcohol by volume: 10% Residual sugar: 15% Titratable acidity: 1.2%

Bottle from Eden’s Winooski. Pours brown and viscous. Has a lot of tartness and wood notes on the nose and tongue. Hides it’s booze well. Nice!

375ml bottle from Scrattings. Rating #3900. Dark amber brown colour, no head and aroma of apple pie, pastry, caramel, vanilla. Taste is sweet, tangy apple, tart juicy, apple pie hints, with drying oaky tannin. Syrupy mouthfeel, full bodied, low carbonation, semi-dry finish with residual sweetness. Nicely sippable.

Clear orange to dark amber cider, no head. Aroma: lots and lots of apple juice, sweet, bit sugary. MF: soft to no carbon, medium to full body. Taste: pretty sourish, alcohol, sweet, sour apples, very nice stuff, bit sugary. Aftertaste: sweet, lots and lots of sugary apple juice, very complex, really lovely stuff!

Thnx eugene ! Pours dark amber. Smell is intense, sweet applejuice. Heavy on the alcohol. Taste is full, sweet, intense apples, wood, strong , silky. Mild booze. Very nice !

187 ml. bottle sampled @ "D. & E. Tasting #3". Obtained in a trade with AdamChandler, likely a vintage. Quite dark orange. Nose is very sweet thicker ice cider, sugar, sweet warming, low cinnamon. Taste is sweet warming syrup, apple candy, thick sweet syrup ice cider, sugar, pleasantly warming, some sugar,… Thicker bodied. Very good Ice Cider far better than their Honeycrisp.

Bottle shared by seeswo - thanks again, Chris! - because he heard me ask "Don’t they make ice ciders?" when Roger pulled out one of their regular ciders. This one pours a clear orange gold with no head. Tangy and sweet, with candied apple, honey, sugars, leather, wood, slight vanilla, just a little acidity, and a wave of berry fruits on the finish. Medium-bodied, with low carbonation. Really nice ice cider.

Amber pour, tending towards a burgundy. Syrupy, clinging to the glass, but no legs to speak of; just clings. Big aroma of apples dipped in honey. Vanilla, cinnamon and alcohol. Flavor immediately shows the barrel aging. Vanilla, strawberry and tannins. Super sweet, but somehow balanced. Pretty assertive acidity in the back when you’re looking for it, but I didn’t even notice at first. Wood, alcohol burn, apple, clove, honey, a touch of black pepper. Really complex and really damn good. I can’t put the glass down. I could drink this every day. Delicious stuff.

Bottle pour at VT cider tasting at Wassail was hoping Eden would bring this one. nose is apple pie and oak. tastes of apple puree, oak, vanilla, poached pears, alcohol, and pie dough. some booziness on finish and fairly sweet. Tasty beverage

Bottle pours at ANXO. Pours clear pinkish orange, no head or lacing. Aroma is apple, red apple all the way. Fully sweet and super rich apple flavor with oaky highlights. Light plus body, hint of tartness as well. Nice sipper.
