COMMERCIAL DESCRIPTION
Controlled fermentation in stainless steel vats. Indigenous yeasts. The fermentation is controlled by successive racking. Bottle conditioning takes place using selected yeasts. The lees break down and are re-absorbed by autolysis, which gives the cider structure and roundness. The deposit remaining in the bottle is removed by disgorging. The cider made in this way is clear and without deposit. Bottled in the spring. Fermentation on the lees takes place for at least six months before disgorging. Density (O.G.): 1050 after pressing, equivalent to 120 g of sugar per litre. 1006 when bottled. Tasting notes Eyes: Clear. Pale yellow colour. Very fine and persistent mousse. Nose: Fresh, fine and delicate. Aromas of green apples, caramel and citrus. Mouth: Brisk, fresh, fine and elegant. Sharp apples and citrus underpinned with a hint of iodine aromas. Suggestions Storage: Keep the bottles upright or lying down in a cool cellar (8 to 12°C, 46 to 54°F ). The fact that there is no deposit makes the Cuvée Colette capable of being kept many years if conditions are good. Service: Aperitif, or to accompany seafood, sushi, desserts made with brisk fruits, brioche. -2011: 6.9% 2012 - 8.5% 2015 - 7.5%

UPDATED: JUL 31, 2021 Aus der Flasche (Vintage 2015) im 2021-07 getrunken. Dieses hell gelbe Cidre kommt mit einer schönen feinperligen Kohlensäure daher. In der Nase sind erfrischende Apfelaromen mit einer spannenden Balance zwischen säuren und bitteren Äpfeln deutlich. Am Gaumen wirkt das Mundgefühl schon sehr edel und wunderbar ausgewogen daher. Ein tolles Cider!

UPDATED: OCT 22, 2020 2017 ed 7,5% at home , bought at the farm. Almost clear, light white wine coloured with a foamy slim white head. Champagne/cava upfront, white wine, grapes, tannin dry, light green apple, light acidity and tart. Medium body, high champagne carbo.

UPDATED: DEC 20, 2019 750mL bottle at Holm, pours a clear pale golden blonde, no head. Nose is full of champagne yeast, brut-style, with barnyard funk and light acidity - almost smells more like a white wine. Flavour is bone dry, with barnyard funk, light tannins, and champagne yeast a la a brut. Dry and complex. Lovely.

UPDATED: SEP 1, 2019 Botella. 2015 version. Pale yellow colour. Apple citric spitzy aroma. Good palate. Apple citric flavour, dry, bit sweet, light bitterness. Quite pleasant.

A: sour apples, green apples peels, citrus, bit woody, bit vinous, bit sour berries. T: sour apples, vinous, very dry on the palate, hint of woody, unripe berries, bit lemon, very nice for the style, refreshing, higher carbonation, fully enjoyed.

Nose is dry Sulphur (low), white wine cider, fruity dry vinous white grape & apple skins. High carbonation. Fizzy apple, white wine, grape, lemon, apple, dry lively white apple, sugar, white wine in a great way,..; Super high carbonation & dry white wine.
