COMMERCIAL DESCRIPTION
A very dark and entirely unique holiday seasonal beer, at a whopping 10% alc. by volume. Reportedly spiced with honey, caramel, coriander, black pepper, and other secret ingredients. The alcohol content probably goes a long way toward explaining that very warm and satisfied feeling one finds on the very first sip. A rich, dark-flavored beer with lots of deep-roasted chocolate malt, but still fairly dry, with a hint of sourness at the core. It is very spicy, with some winter spruce flavor in the bargain. The wild yeast sourness also adds to its welcoming character.

UPDATED: DEC 23, 2021 Botlle from Bierparadijs Utrecht. Vintage Rëserva 3 years de garde edition distributed 2021. Three years cellared at the brewery, thanks Dany. Color: Hazy ruby to copper, large brownish white head. Aroma: Malty, spicy and dark fruit notes. Taste: Malty, spicy, earthy, dark chocolate / cocoa and notes of caramel, raisins, roasted malt, rye, nutmeg, yeast and subtle dark fruit. Light hints of pinetree. Bit warming mouthfeel. Slightly boozy. Long lasting dry-ish, bit earthy and medium to over medium bitter finish. Over medium to full body, just under average carbonation. Great Christmas beer.

Look; dense tan head on veiled amber body poured slowly, frosted lacing after first sip. Taste; roasted caramels, big bouquet of spices and typical floral belgian yeast, caramel fudges syrup, drying citric notes, and finish is drying and balanced. Feel; good dry body and okay co². UPDATED: DEC 11, 2021 Bottle split at the KristmasKracker Tasting, thanks to Leighton, Watford 10/12/21. Modest gushing offered on opening. Murky amber with a good sized light beige covering that stays for the show. Nose is tangy fruit esters, herb, light funk, barnyard. Taste comprises fruit esters, grains, herb, hedgerow, modest funk, floral nip, yeast tones. Medium bodied, prickly carbonation, semi drying close. Good flavour profile but the over carbonation lets this one down.

UPDATED: DEC 10, 2021 Bottle shared in Watford - picked up from online shop. Massive gusher - forced the cork out. Pours lightly hazy amber with a frothing, tan head. Lightly sweet, notes of toasted biscuits, nips of earth, caramel, brown sugar, grass, some floral notes. Light bodied, airy, with massaging carbonation. Mild yeast expression to finish, more grass, toasted toffee, earth, toasted wheat. Not bad.

Aroma is nice earthy grains, brown leaves, apple, brown sugars, twig,. Flavour is composed of semi sweet, burnt sugars, earthy grains, gassy, mineral, fizzy. Palate is semi sweet, uber dry, really lively highly carbonated,

UPDATED: MAR 4, 2020 25.4 oz bottle (Old Notes) Pours brown with a small head. Aroma of spices and citrus. Taste of the same with some chocolate coming in. This full bodied brew is well balanced and is quite tasty.

UPDATED: DEC 10, 2019 Color ambrato opaco con riflessi rossi e schiuma beige chiara pannosa ed esuberante. Al naso miele, malto, caramello, frutti rossi, spezie e lievito. Al palato si alternano sapori dolci, malto e biscotti con più aspri, frutta e speziati riprendendo il bouquet olfattivo. Con l’alzarsi della temperatura appaiono note leggermente acide e di cioccolato completando il percorso organolettico. Il corpo è basso e la carbonazione media, abv nascosto ma che fa capolino al giusto momento.

UPDATED: JUL 26, 2019 Aus der Flasche im 2014-08 getrunken. 'Ja ist denn schon Weihnachten?' Nein! Hier wurden zwar Zutaten wie Gewürze und Honig verwendet, doch dies wohl dosiert, daß dieses dunklere Bier mit immernoch einen leichten, wohlschmeckenden Körper deher kommt. So kann Weihnachten auch gern im Sommer schmecken.
