Bought at the castle. Old and dusty bottle, on sale for 2.50 euros and sold as extra brut as it’s last year’s and refermented. They did not change the label, not surprisingly, but the lady at the shop indicated this had probably climbed up to an extra 1%. Highly sparkling beverage, the cork completely exploded upon uncorking. Funky, totally opaque pale gold, mushroomy, earthy, barnyardy, almost cheesy, tartish aroma with background apple juice notes, but really, that’s one of those farmy ones I assume Ratebeer folks are looking for. Its structure lies upon a crackery, very tart apple cookie foundation, but its almost citrusy with its confident acidity. Not as juicy as fruity as most examples, but a really convincing farmhouse cider.
