COMMERCIAL DESCRIPTION
A collaboration with the amazing Fyne Ales ‘Origins’ team. We took a sour amber base and barrel aged for 12 months with Scottish brambles and our house wild/sour cultures. Fruity, Tart, complex. Primary Yeast: Belgian Trappist Secondary Ferm: Brett + Lacto B Barrels: 2nd fill Bourbon OG Plato: 14.0 pH: 3.1

UPDATED: JAN 8, 2022 500ml bottle as part of a delivery from the brewery. We've been saving this one/ Bluish purple, hazy with a quickly dissipating off-white/pinkish head. Sweet berry aroma sits nicely alongside earthy and woody notes and some farmyard funk. Rounded tart taste, red grape and berry flavours with a drying vinous character nearer the finish. Medium to heavy carbonation. This is seriously good.

UPDATED: NOV 12, 2021 500ml Bottle from Hops & Dots Webshop. Amber-red coloured with a quickly vanishing large pink head of foam. It has a tart cherry and red berry flavour with sour berries on the warming, spicy fruit finish. Excellent!

UPDATED: MAY 13, 2021 500 ml bottle, from the brewery webshop. ABV is 6.4%. Red colour, shortlived off-white to pink head. Aroma of wild bramble / blackberries, brettanomyces and lactic acid, a hint of oak. Medium sour flavour with the same elements as the aroma, also notes of lemons.

UPDATED: JUL 23, 2020 500ml bottle from Fierce brewery website (£7.01): Raspberry pink & translucent with a thin, white head that was bubbly & pink tinged, settling around the edges as a thin lacing after thirty seconds or so. It was sour on the nose with funky notes, some lemon & berries, I got some raspberry initially with tart & touches of acidity without it being too complex. The taste wasn't quite as sour surprisingly, there was some citrus & raspberry initially but it seemed more mellow & balanced with only a little tart & acidity showing. It was still quite a dry, sharp beer with softer than expected carbonation levels then some juicy, floral flavours to see things out.

UPDATED: MAY 26, 2020 Bottle from Fierce online shop. It pours a lovely cloudy purple with a pink - white head. The aroma is woody, funky, earth, some spice, damp leaves, jammy and tangy, bramble shines through, plum, prune, must and raspberry pip. The taste is crisp, dry, tart, juicy and tangy, spicy wood, touch of funk, bright berry character, bramble, raspberry, plum skin, cherry, light tannin, berry jam and wood with a drying finish. Medium body and moderate carbonation. Nice depth and rather moreish stuff. Nice work.
