COMMERCIAL DESCRIPTION
Feral Vinifera is our foray into a new and exciting adventure in the Santa Ynez Valley, that expresses our collaborative efforts with local grape growers and winemakers. Its journey begins with the sourcing and pressing of grapes from David Walker’s vineyard, co-fermenting the juice with a wheat-based wort, inoculating with proprietary wild yeast and bacteria, and allowing for a long fermentation and maturation in French Oak barrels. We have carefully fermented, matured and blended this beer with the collaboration of our friend, Andrew Murray, proprietor/winemaker at Andrew Murray Vineyards. The resulting cuvee; a partnership of Sauvignon Blanc, Chenin Blanc and Muscat grapes co-fermented with wheat based wort-bends the mind and senses. Pineapple, mango, guava mingle with Meyer lemon and gooseberry. A funky savory yeast bouquet lays down a firm foundation, fruity esters and tart acidity lend body and structure. Finishing with a flinty minerality, woody tannins and vinous perfume. UPDATED: JAN 9, 2022 Flaska från SB. Klar gyllenfärgad vätska med vitt skum som snabbt försvinner. Doft av vitt vin, druvor, fat. Smaken samma som doften, ganska syrlig, mycket mycket fat, stram beska, exploderar nästan i munnen av smaksensationer, men dör väl fort. Eftersmak med anningen svavel och beska druvkärnor. Spännande och gott utan att riktigt lyfta.

Pours hazy golden with a white head. Aroma has notes of malt, funk, green grapes and tartness. Taste is medium sweet and medium sour with a long dry, funk, tart and grape finish. Body is full, texture is oily, carbonation is soft.

UPDATED: JAN 26, 2021 Bottle, 375ml corked. 2017 vintage. A mostly clear deep golden colored beer with a minimal sized white head. Rather hefty aroma with alkohol, lemony acidity sting and a good dash of funk, but also oak wood, grapes, grass notes, saison pepperyness and a hint of vinegar. It's full-bodied, warming and acidic, softly carbonated and strangely enough quite smooth on the palate. Guess the oak add some silkyness here. Leather, barnyard, wood, some vinegar and grass, grapes and generic fruityness, some faint peppery hints and a touch of orange zest and something flovery in the flavor. Lasting finish with a good dash of alcohol, but not in a pushing way. Even though I think I'd prefer this one a bit less boozy, it's still a really delicious one. 210126
