We’ve patiently waited for two years to offer you this exquisite ale! Sour Opal retraces its roots to the lambic cellars of the town of Brussels and the Senne River valley, in Belgium. This American “Gueuze” represents a spectrum of flavors from a traditional barrel aged sour ale, complete with aromas of aged cheese and a distinct earthy mustiness that can only be found in a well cellared barrel aged sour. The complexity and balanced flavors of Sour Opal can be attributed first to the crisp assertive tannic acidity of the Viognier barrels. Oak-derived flavors and aromas mingle with guava, passion fruit, pineapple and tart cherry notes. This beer rounds out with a crisp clean and quenching acidity as well as a mild grape fruitiness that is intensified by a higher carbonation level.

UPDATED: OCT 14, 2020 Rating #8500! Super light golden and light copper coloured body with a very thin and fast-dying, almost non-existent off-white head that fades to just about nothing. Not very nice looking, but about right for the style, minus the minimal carbonation. Aroma of super soured, tart and funky spontaneously fermented yeast with a light grassiness, some stone fruits and a good hit of funky floral and soft sweetness from the fruits - very nice and elegant throughout and closest to a pure gueueze lambic in the nose at least. Light to Medium-bodied; Crisp and wild, grassy and very yeastie flavours with a good spontaneously fermented crispness with some added complexity that shows a floral and slightly herbal bite, but the peaches, apricots and spiced pear notes are the strongest. Aftertaste is dry, floral, grassy, very elegant and super yeastie throughout with a great pungency and robust quality from the foeders and the soured, oaky, dry yeastiness that makes this akin to a real belgian gueuze. Nice to sample, just a few days after three years after purchase, as a milestones rating (#8500!). I sampled this caged and corked, 37,5 cL bottle, purchased from BeerTopia in Omaha, Nebraska on 01-October-2017 for US$11,99 sampled at my house here in Washington on 13-October-2020.

UPDATED: APR 25, 2019 Restrained tart aroma in a golden pour. Laid back tart taste to start with a big fruit salad body and a hint of wood in the finish finish. A subtle sour from CA for once - and better for it.

Bottle pour at Side Project Zwanze Day 2018. Pours a cloudy deep gold with a finger-plus of frothy white head that takes forever to settle into a thin enough film to drink, leaving spots of lace in the glass on its way down. Notes of fruity funk, really emphasizing stone fruits, with some minor berries and grapes and tart citrus, especially lemon, with oak, vanilla, pale and sweet malts, and some funk. Light-bodied, with medium carbonation and a tart, fruity, funky mouthfeel. Nice beer.

Tap. Clear gold small white head. Aroma: hay, apricots, under-ripe nectarines, bracken die back. Tart at first then the fruit comes though sunnily. Then acid, bitterness and wood take over. There’s not a lot of depth but it is elegant and refreshing with fine balance.
