Pours a cloudy orange color with a thick creamy white head. Nose is yeasty and sweet like honey. Palate is full, yeasty and also carbonated well. Flavor is light banana, some nice dried apricots and peaches. Finishes clean.

500mL Swingtop. Apple juice, hard cider, and cinnamon sticks. A stale juicebox is crushed by a dump truck. Old. Pours a reddish orange-amber, with a rim in white. Flavor is wet and sugary, flaccid and deadish. A bit of white pepper in a sea of exact hard cider. Some fruit, alcohol and age. Parching. Alcohols are hot and the malt character is reduced. Weird in older former. There’s some resemblance of beer here, but it may be a bit too far gone.

750mL bottle, courtesy of EDA at BCTC 2007. Thanks, Mike! Pours a cloudy, brownish-yellow color; off-white head with patchy lacing. Dense, overripe fruits and chewy esters in the aroma; slightly too ripe. Medium-to-full mouthfeel: lively carbonation; chewy esters and belgian sugar, with a dry, peppery character coming through mid-palate; lengthy, peppery and fruity ester finish.

Bottle conditioned 750ml sample. Slightly murky from the yeast, with a yellowish colored body and a finely bubbled white head. Funky brett, egg whites, oranges and yogurt scents. Weird, slightly sour creamed apple sauce flavors, creamed peaches as well. Stronge but good, with a parched and dry finish.

On tap @ GRBC. Has a clear apparances, poured in a tulip glass. Aroma is wheaty and estery, but there are hints of alcohol even in the aroma. I found this beer to be rather dry. The alch content is fairly high and very noticible. The first few swallows had an astringent feel to them, but as I drank more, it got smoother, and I could detect other flavors: sweet hops, white grapes, apples, and yeast. It has a very sweet aftertaste which lingers for awhile.....

UPDATED: DEC 10, 2005 straight out of a bottle from GRBC...apple juice appearnace with no head; aroma is of a wheat beer with belgian notes (spices and sugars)...flavor was similar but also had nice lemony notes to it; sweet and fruity as well; im surprised the other ratings are as low as they are, bc i thoroughly enjoyed this beer......rerate on DEC 10, 2005 from tap (3.1)...pretty much sucks on tap compared to 750

Silphium (3721) - Traverse City, Michigan, USA - JUL 28, 2004
On tap at the restaurant. Clear straw-colored body with effervescent carbonation and a thin off-white head. Sour apple peel, candi sugar aroma that came across as quite sweet with a sour streak. Flavor was surprisingly nice with cloves, candi sugar, sweet bread, white grape, and banana, finishing with a touch of band-aid alcohol. A tripel for the masses; this is quite thin-bodied and tastes watered-down, although it is pleasant overall.

(On tap at the 2003 Michigan Brewers Fest) A totally typical, sweet, servicable Belgian. But there's certainly nothing "metaphysical" about it! They should be careful in naming their beers - people might lose faith! :)

At MBG Summer fest: Amber hue, no head or lace. Fruity and woody aroma, hint of some yeasty sweet bread. Taste was sweet with clean balance. Slighty watery mouthfeel, not right for a tripple, a little too thin in the body also. Just okay. I'll pass unless a rerate is in order at the brewery.
