Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

UPDATED: JUL 16, 2020 Schwarzes Ale mit hellbraunem Schaum im Glas. In der Nase Holunderbeere und Zuckerrübensirup. Im Mund überraschend unsüß, würzig, vollmundig, mineralisch, ausgewogen. Ein schwarzes Ale mit guter Bitterkeit und begleitenden Heu-, Malz- und Waldfruchtaromen.

Bottle. Pours dark brown. Aroma is elder berry and dark malts indeed, fruity sweetness. Body is medium, softly sour, pleasant gentle body, lowish carbonation. Balanced, more berries and roasted malts. Good.

Robe d'un noir profond, avec une très faible mousse et carbo. Un nez très riche et subtil, sur le cacao pas trop grillé et le chocolat, avec une note de fruits rouges. En bouche, attaque grillée assez douce, avec du cacao léger et du chocolat, une touche douce crémeuse (avoine et blé), très agréable. Le fruité ressort sur la longueur (très belle longueur en bouche soit dit en passant, aussi bien sur le fruité que le grillé et la corpulence de l'avoine), très subtil et se marie bien avec le corps grillé et crémeux. Une réussite, originale qui plus est !

Best Before Feb. 2010: I was a little scared to try this because it's usually hit or miss with fruity beers for me. This beer reminded me of a cross between a good quality oatmeal stout and porter. The elderberries were rather mild, which was fine for me. They gave the flavor a slight tart taste, sort of sweet and sour at the same time. I didn't notice it that much at first, but as you take more sips it lingers on tha palet. Other flavors of chocolate malts, oat, and hops. Appearance was dark dark brown/near black with a slight red hue. Not much of a head (which was a tan/mocha color), but a decent amount of carbonation....medium thick lacing that sticks for a few seconds. I enjoyed this one a lot, and would look to buy a 4 or 6 pack next time if available versus just a single sample.

Bottle @ You’ll Never Walk Alone, Kolding. Pours hazy very dark brown with airy tan head. Clear aroma of malt and roast, with notes of berries. Bitter, roasty and hoppy flavour with soruish notes of berries and touches of coffee, yeast and malt. Roasty and dusty aftertaste. Decent as such and quite good for the style.
