COMMERCIAL DESCRIPTION
Clover (2005-2014) was a grey cat. Simple. Yet, a few moments with her quickly revealed an independent, playful, occasionally subdued and reflective personality, one that held sway where she might roam. Clover was our compatriot, our guardian of grain, our huntress and our muse. We did not own Clover; she graced our presence. In her honor, we mindfully blended barrels of Ann, Art, and Flora that had been aged for 12 to 22 months—guided by her lingering spirit towards a beer of elegance, grace and patience. As often as our Clover would, this beer took its own path and its own time to become what it is now; an effervescent, refined reflection of both our melancholy for her departure but, most importantly, our joy in traveling with her for a while.

UPDATED: NOV 27, 2021 Bottle at home in Hackney - sourced in a trade. Pours clear honey-gold with a small, frothy white head. Some old wood in the nose, a little funk, citric notes. Lightly sweet with moderate acidity, some lemony bite, oak, soft grassy bitterness, a little musty funk, salt. Light bodied with delicate carbonation. Tart and quenching on the finish, more citric acidity, tangy oak, mild grassy bitterness, restrained barnyard funk. Outstanding.

UPDATED: AUG 11, 2019 375ml bottle, batch 2. Thanks Donovan! Complex, sourish and vinous with loads of grapes, oak, wood, apricot and tartness. Pretty nicely balanced and complex vinous farmhouse ale. Good one, but not quite worth the insane hype this beer has.

UPDATED: AUG 11, 2019 Bottle from a friend. Slightly hazy yellow color, white head. Sour taste with citrus, oak, minerals, ripe fruits, yeast, grapes and tart. Sour finish with citrus, oak, minerals, grapes, tart, yeast and grass. Excellent sour ale.

Bottle shared at Sunday Brunch Bee Boost. Massive thanks to J for pulling this out. Pours a clear golden with a white head. Such a depth & balance to this. Very vinous, white wine, strong grapes presence, pleasant light funk, oak, bright citrus fruits, sour grains. Delicate and smooth yet full of flavor. Hill Farmstead at their best.

Bottle shared at Sunday Brunch Bee Boost. Clear golden with a thin white head. Aroma of white wine, oak, soft funk, light fruits, grapes. Flavour is light moderate sweet and light moderate bitter with above light sour notes. Medium bodied with soft carbonation.

Bottle thanks to Bursprak. Aroma of nice funk, pears, green Apples, poly White wine, noget ved tannins and pretty subtle. Taste is funky and has alot of citrus notes, poly White wine, green Apples, mild vinegar and tannins. Delicate indeed.

Bottle @ Late Summer Whale Share! Pours hazy golden with a small white head. Aromas of citrus, honey, oak, vinous grapey notes, melons, pear, esters. Taste has lots of floral notes, estery, oak, citrus, quite acidic, flat sort of underwhelming finish.

375ml bottle pours semi clear bright w yellow with medium small head. Nose and taste have tons of bright citrus, mandarin orange, orange marmalade, clemetine, soft malt grain underline with subtle soft hayfield funk. Medium higj acidity. Beautiful beer. So much citrus!

Light hazy pale yellow with a medium sized frothy white head. Great typical Hill Farmstead aroma with bright citrus and funky bretty notes, some grape skin, oak and smooth vinous notes and some minerals. Taste is slight tart, light sweetness and soft vinous. Light to medium bodied, slightly dry, average carbonation. Finish is vinous, tart citrusy, slight herbal and dry oak notes.
