COMMERCIAL DESCRIPTION
To honor Dorothy, Edward’s sister, we have aged her namesake dry-hopped Farmstead® Pale Ale in wine barrels for more than 10 months, then divided the batch, so that each might be adorned with distinctly different hops. These compositions are intended to highlight the characteristics of hops grown in two different hemispheres. The Southern Hemisphere expression features Motueka™, Nelson Sauvin, and Riwaka

UPDATED: JAN 1, 2022 375 mL bottle. Cloudy yellow. Smells of white wine, herbals, bright grape fruitiness, earthy yeast notes. Tastes the way it smells, but in reverse. Earthy yeast and Brett, oak, then fruity hops. Tropical and grapey hops. Back end is strong white wine and lightly acidic. Wonderful.

UPDATED: DEC 14, 2021 375ML, split 2 ways. pours a straw below color. peppery clove and spice forward grassy aroma. mmm, this is delicious. I like it much more than the other hemisphere. this has a richer, deeper texture to it and a lot more flavor. citrus, pineapple juice, peppercorn. Lovely wish it was a 750.

UPDATED: OCT 18, 2021 Bottle, hazy golden with small white head. More citrusy than the Northern. Lemon, bright grapefruit, white wine, lemon-lime, light windex but in a good way. Maybe a touch of SR mustard in the Southern. They are pretty close tbh.
