COMMERCIAL DESCRIPTION
Back in February of this year, we added several hundred pounds of raspberries to oak barrels containing mature sour beer. We then allowed the beer to re-ferment to dryness. The result is Atrial Rubicite, our first barrel aged sour beer to incorporate fruit. Atrial Rubicite is made from well water, barley, wheat, hops, farmhouse yeast, native yeast from the Texas Hill Country, souring bacteria, and raspberries. It’s 5.8% alcohol by volume, has a finishing gravity of 1.005 and is 3.36 pH. It is unfiltered, unpasteurized and 100% bottle conditioned. Atrial Rubicite is our first beer to be packaged exclusively in 500 ml bottles.

UPDATED: NOV 6, 2021 Very glad to try this one. Thanks, Joe! Deep red pour, unbelievable raspberry jam. Uh oh, is this going to be like New Glarus Raspberry Tart, sweet and sticky? Oh no! Dry and tart. Very acidic, and for my palate that really detracts. It's an impressive beer, packing unbelievable flavor and aroma into a relatively low abv, but I'm not enjoying it the way that I did the Floodland bottle we warmed up with.

UPDATED: MAR 21, 2020 500 ml bottle. Pours a very deep and dark red color and topped by a thin light pink head of foam that fades away quickly to a thin ring of bubbles. The aroma shows notes of huge, tart and jammy raspberries, seeds, black currants, wheat, funk, old hops, and soured oak. The flavor follows suit with the tart, jammy raspberries, black currants, cherries, and funk up front and backed up by the wheat and pale malts, old oak, and a bright sourness with a touch of acidity on the back end. Medium bodied with ample carbonation that leads to a sweet and tart raspberry, currant, wheat, and funky old oak on the finish. Really delicious stuff and I hope to have this one again.

UPDATED: AUG 4, 2019 Bottle shared at Lucky Bamboo. Thanks Andrew! Pours a deep burgundy red with a small bit of off-white pink foam that lingers as a ring around the glass edge. Lovely raspberry driven nose with some seed and skin and light balsamic notes as it warms. Oak with some light cream notes on the palate but raspberry drives the palate as well. Some mild seed astringency, good acidity and carbonation as well. Smooth and round with a refreshing finish. Raspberry flesh and skin coat the palate on the finish. Delicious.
