COMMERCIAL DESCRIPTION
In the fall, very ripe apples are hand picked and stored at cool temperatures until the end of December. Once winter arrives, the fruit is pressed and the juice obtained is placed outside in the intense January cold. During crystallization, the water separates from the sugars by NATURAL CRYOCONCENTRATION. After few days of intense cold, concentrated must, representing 1/5 of the initial quantity of juice, is collected by gravity. The must is then placed in OAK barrels where it ferments for at least eight months at low temperatures. Raised on lees for 4 months in barrels, it was then assembled and bottled.

Wow another gem from Neige. 375mL bottle from a sampler pack. Similar to the others but with more sweetness and less of a dry finish. Very mellow. A terrific alcoholic beverage. Buy if and when you can.

375ml bottle, recolte 2013, 12.5%. Pours brownish copper with an off white ring, leaves legs. Aroma is honey, baked apples, raisin. Flavor is sweet, but not cloying, with apple, honey, raisin. Mild oak in the finish. Perfect balance. Very nice!

Poured from bottle thanks Willrunforbeer bright gold with orange hues and thick lacing. Aromas of juicy apples oak and hint of vanilla. Taste is luscious balanced sweetness apple vanilla oak and a nice lingering alcohol finish. Stupendous.

375 ml bottle shared with crew. Pours a veiled reddish-pinkish amber with no head. Aroma is wood, apple, chocolate. Flavor is green and red apples, wood. Finish is boozy, sweet, woody and smoky. Finish is booze, sugar, wood and smoke. Full body, sticky and velvety mouthfeel. No carbonation.
