COMMERCIAL DESCRIPTION
Aged in a series of American oak foeders using a blending technique known as solera, nuanced flavors of caramel, toffee, & fig create an experience made to be savored. This legendary ale will continue to evolve with each pull from the foeders, becoming more complex over time. (from label) Throughout the ages, Dragon’s Milk has been a term used to describe a liquid worthy of celebration, a reward at the end of the journey. Dragon’s Milk Solera is representative of both the journey and the reward, and how both can evolve into something unexpected along the way. Style Foeder-Aged Ale Color Copper How It’s Made Legends don’t happen by chance. They come from a series of moments, leading to one that’s remembered forever. 1. Milling, mashing, lautering, boiling, fermenting 2. Beer is then aged in a series of foeders known as criadera and slowly pulled toward the solera. 3. The solera, or final foeders, contain a small amount of beer from every batch ever brewed. 4. The legend of Dragon’s Milk continues. The best liquid in our house, is now yours.

UPDATED: DEC 7, 2021 355ml bottle from Premier Hop, Pudsey, W.Yorkshire. A dark amber/brown coloured pour with a medium off white head on top that doesn't hang about too long. Aroma of dark fruit, figs and caramel. Tastes of caramel, dark fruit, figs/dates, a hint of bourbon and butterscotch. It's actually rather nice but still lacking complexity for a New Holland ale.355ml

UPDATED: NOV 3, 2021 Pours murky brown with a big frothy head. Nose is toffee, raisins, oak, sherry and malt. Palate is very thick. Taste is cinammon, oak, tannins, toffee, citrus, brown bread, blackcurrants and smoke.

UPDATED: SEP 9, 2021 Bottle sample at a tasting. Hazy bronze with white head. The aroma has notes of apple, caramel, alcohol, butterscotch. The flavor is sweet with notes of alcohol, caramel, apple, acetaldehyde, butterscotch. Full-bodied.

UPDATED: SEP 3, 2021 Pours dark brown with a small head. The aroma is of caramel malt, oak, and chocolate. The flavor is sweet with toffee, oak, and maybe vanilla. It’s pretty good but not on the level of most of the Dragon’s Milk beers. I’m confused. Dragon’s Milk has always been New Holland’s imperial stout variations (with the exception of the White). That’s what I was expecting here. Oh well.

UPDATED: AUG 21, 2021 12 oz bottle with a pulled date of September 15, 2020. Appearance. Poured into a Belgian snifter but only a short and semi-durable beige head appeared. The clear body is a beautiful, dark reddish-orange color. Aroma. Mild and perhaps slightly disappointing for the Dragon's Milk series, but that is a high bar. Moreover, the aroma is still excellent, especially after a little warming. Flavor. Rich, complex, harmonious and well balanced, with a mix of barrel aging effects and dark dried fruits in the forefront. It has a fine, lingering aftertaste. Mouthfeel. Very smooth, full body with well chosen low carbonation.

UPDATED: AUG 8, 2021 12 ounce bottle from Festival Northland, 8/7/21. Dark brown, thin tan head, good retention. Aroma of chocolate, roast, plum, mildly tart. Taste is roast, dark chocolate, dark fruits. Full bodied, booze well hidden but somewhat present. Mild tartness. Nice.
