COMMERCIAL DESCRIPTION
On my way to this iconic brewery with a suitcase full of marshmallows I admittedly questioned my good judgement. However, sipping on a glass of this beer I am utterly happy that the purist in me stayed at home.

Omnipollo Hypnopompa is an imperial stout brewed with almost 100 kgs of marshmallows and Tahitian vanilla beans (the size of cigars). Virtually no carbonation and boiled a bit extra for good measure this is a beer strictly for the stout inclined.

Batch #1 intentionally has no carbonation. Batch #2 has low carbonationd and cold extracted Hafursa coffee.

Drink now or age for many years.

UPDATED: NOV 26, 2020 Oily pitch black pour with no head. Robust stout aroma with deep cocoa, syrupy cola and slightly acidic coffee, vanilla too. Quite low carbonation, light airy mouthfeel, finishes dry. Flavor has toasty campfire malts with acidic syrupy cola and strong vanilla. Robust stout with good balance of flavors.

UPDATED: NOV 24, 2020 It pours black with a dark brown head. head retention is very good and the beading is very tight. It has a strong initial coffee aroma. There is a low level of vanilla with hints of marshmallows. It has a combination of coffee and chocolate with a low vanilla element. There are also a very low level of dark fruits in the background. It has a full body with pleasant alcohol warming. The after taste has more of a marshmallow texture and flavor than the rest of the tasting experience. Overall, I like the bitterness and roasted coffee and chocolate flavors. There are complex flavors with the vanilla and dark fruit elements. To me, it's more of an enhanced imperial stout than an actual pastry stout.

nathanvc (4147) - Gent, BELGIUM - OCT 11, 2020
UPDATED: OCT 11, 2020 Bottle from Gedeelde Vreugde. Cloudy black with a thin, beige head. Intense & enticing aroma of coffee roast, chicory, wet earth, chestnut, fig jam, toast, kahlua, marshmallow, milk chocolate, fondant, treacle, raw vanilla. Taste has very sweet candied fig, raisin, fudge & marshmallow but perfectly in balance, nuttiness leads the way into a bitter middle of coffee roast, toast, earth & dark chocolate, powdery effect with a vague edge of umami soy. Earthy hoppy finish, dry & powdery with lots of coffee roast & fondant, subtle vanilla hint along with the marshmallow but remaining restrained, if not a bit overpowered by heating kahlua-like alcohol. Full body, oily texture, soft carbonation. Big & sweet Pastry Stout but complex & not renouncing the 'modern' hoppy standards. Ridiculously good, but in my memory the Pecan Mud Cake was even better.

Dogbrick (17956) - Columbus, Ohio, USA - SEP 18, 2020
UPDATED: SEP 18, 2020 Quarantine Beer #126 sampled at home on 05/10/2020. Brown-black pour with a medium tan head that recedes steadily to a dense film. Patchy lacing. Aroma of malt, marshmallow and chocolate. Full-bodied with flavors of roasted malt, sweet marshmallow and chocolate. The finish is roasty with a chocolate-covered marshmallow aftertaste. Pretty good all around.
