COMMERCIAL DESCRIPTION
Is it beer, or is it wine? "Aged in French oak wine barrels for twelve months with distinct characteristics of fruit and subtle oak" sounds more like a description of wine than beer. But, of course, Temptation is indeed beer. Actually, Temptation is a Blonde Ale Fermented with a special strain of yeast, then aged in French oak chardonnay barrels. Flavors of wine and oak absorb into the brew throughout twelve months of aging. During this aging process, a secondary fermentation occurs using a yeast strain disliked by most brewers and winemakers called Brettanomyces. The "Bret" gives Temptation intriguing characteristics and a pleasant sourness. Temptation is re-fermented in the bottle to create its carbonation--a process commonly used to make fine champagne and sparkling wine. Spent yeast forms a thin layer of sediment to remain in the bottle.

UPDATED: AUG 24, 2021 On tap at brewpub. Hazy pale gold pour. Excellent lacing. Yeasty, funky, oakey aroma. Plenty of farmhouse funk. Bready, tangy, citrusy and herbaceous flavor. Quite amazing. Tart, enduring finish.

UPDATED: JAN 16, 2020 Bottle with a cork and a cage, like Champagne. Pours a slightly hazy white gold, with a very fine mousse, just like a Champagne. The taste is fruity, refined and slightly sour. Elegant notes of white wine and greengage are mixed with tropical fruit, lemon peel, cucumber, yeast and freshly cut grass. Some barnyard notes of wet horse blanket. This is a many-layered beer which repays careful and thoughtful tasting. It is a thing of rare beauty - an exceptionally well-made and beautifully balanced beer of remarkable quality.

UPDATED: DEC 27, 2019 Pours slightly hazy straw color with spongy white head. Nice. The smell fills the room. I'm twelve inches away from the glass and I can smell lots of honey, barnyard, slight cork—like woodiness. I bring the glass up to my nose. So much going on, it takes a minute to process. Grassy, floral, like a meadow, peaches, apricot, pineapple, mango, slightly tropical, but juicy, nectary, orange peel, a bit of clove, white pepper, funky aromas of horses, wet hay, bright, woodiness is not overpowering, sharp hit of vanilla. The flavor starts as I expected, layers of flavor. Funky, tart, not overly sharp. Leather, apricot. Ends on a grassy, floral, slightly coppery bitterness. Thin fizzy carbonation. beautiful. Pairs gorgeously with Kaltbach Gruyere.

UPDATED: DEC 8, 2019 Bottle: pours golden with a white head. Aroma is winy, woody, little funky. Light wine notes, barrel notes, not too acidic, doesn't hit you over the head. Sour. Slight sweetness. Pretty good.

UPDATED: NOV 23, 2019 Bottle pours golden with good head. Basement citrus aroma, some wood barrel. Highly sour, no off notes, wood barrel, lemon citrus, mild white wine notes. Delicious, straight forward sour. Very nice.
