COMMERCIAL DESCRIPTION
Around the time of the Louisiana purchase, beer was shipped in barrels. if one had been lucky enough to receive a used Bourbon barrel of Imperial Stout, this is what his/her happy taste buds would have encountered: roasty, rich, malty imperial stout with a strong dose of caramel, oak, and Bourbon character. This is the perfect beer to pair with hearty, cold weather dishes, smoked meats, and virtually any dessert.

UPDATED: JUL 22, 2019 Bottle, 2017 vintage. Rich caramel aroma with notes of vanilla, bourbon and oak. Pours deep brown with a thin mocha brown head that has little retention and some lacing. Starts with rich caramel malt and vanilla flavors as well as having a rich, full body and smooth, luscious mouthfeel. Finishes impeccably smooth with bourbon and oak flavors as well as a bit of warming booze. Fantastic imperial stout.

UPDATED: MAR 20, 2019 Bottle shared at Alex's Birthday. Pours a pitch black with a beige head that lingers. Dark malt, caramel and light coffee aromas then bourbon as it warms up. Oak and dark chocolate on the palate. Full bodied with good balance between barrel and beer. ABV hidden well, with more bourbon, oak, vanilla bean and cacao nib on the finish.

This Imperial Stout, cellared for 9+ years, pours a slightly translucent, dark-brown body with a thin, tan head that fades quickly to a bubbly ring. The nose offers intense aromas of bourbon, old wood, prune, molasses, soy sauce, and mushroom. On the palate, it's quite earthy, showing flavors of dark chocolate, decayed wood, raisin, oak wood, mild vanilla, cocoa, mild bourbon, caramel, and a hint of coffee. The beer is full bodied but not heavy, rich, or cloying, the carbonation is low-medium but acceptable for the style and age, and the mouthfeel is smooth, but lifted by mild acidity. Overall, this is a pretty delicious Imperial Stout that has cellared very well. This isn't likely to improve with further cellaring though, so drink up!

Pours black with a medium tan head. The aroma consists of roasted malt, whiskey, oak, chocolate, and vanilla, and its pretty well balanced. The taste is lightly sweet. On top are flavors of chocolate, roasted malt, and raisin. There is solid caramel and underneath is slight coffee and mild whiskey. Long chocolate aftertaste. Medium to full in body, smooth in texture, and very soft in carbonation. This one drinks rather easily and doesn't betray any hints that its as strong as it actually is. Very enjoyable.

UPDATED: MAY 7, 2018 bottle at last night's share. 2007 vintage. Another normal pour, leading into a boozy, woody, dark roasty aroma. Taste is more of the same, bourbon-y notes, mildlt sweet, and a bit of burn.

Capa (4059) - JAPAN - FEB 16, 2018
Listed as Ibex Cellar BA Imperial Stout. Black with a dark head. Luxuriously rich malts, chocolate, caramel, wood, mild roasted malt, background bourbon. Thick, silky body. Finish is long and sweet. Nice brew.

11.2floz bottle, BOD: 01.20.2018, $4 single, nonic glass. There's a new label and its come under the Ibex series, but it appears to be the same beer at 10.2% ABV. Appears near black in color with a small brown head. Notes of oaky vanilla, bourbony booziness, toffee maltiness, and mild coffeeness are reflected in the nose and the full-bodied palate. Good.

Bottle. Pours opaque dark brown with foamy tan head, woodsy mocha aroma with hints of booze, low carbonation, sweetish woodsy mocha taste with bourbon overtones, smooth body, long throat burning finish with bourbon aftertaste. Potent and smooth, but a bit too sweet.

75cl bottle, sample. Vintage 2007. Poured cola brown color with a thin off white head. Boozy nose, some Bourbon and wood. Bourbon in flavor, malts, caramel, booze. Warming finish. Lost some of its charm of course but worth trying.
