COMMERCIAL DESCRIPTION
Over the past 3 years, I have been brewing blond-base beers with subtle changes every year, to harness what this Missouri based microflora can do and to showcase and develop a whole new plethora of flavors and experiences. The yearly brews were:
2014 - A mash bill of 65% Pilsner and 35% Unmalted Wheat that was turbid-mashed and boiled for three hours with hop pellets. Inoculated with Barrel #40 and fermented in and aged in two neutral Hungarian Oak 500L Puncheons.
2015 - A mash bill of 65% Pilsner and 35% Unmalted Wheat that was step-mashed and boiled for two hours with aged, whole-leaf hops. Inoculated with cultures from the 2014 brew and fermented in and aged in two French Oak 500L Puncheons.
2016 - A mash bill of 70% Pilsner, 20% Unmalted Wheat and 10% Malted Wheat was single-infusion mashed and boiled for two hours with hop pellets. Inoculated with cultures from the 2015 brew and fermented in and aged in two French Oak Pinot Noir 500L Puncheons.

UPDATED: JUL 12, 2020 Small white rim; clear, mildly carbonated golden beer. Peach, lactic acid, white grapes, floral & young green vegetables. Quite sour, with a very nice vinous ending. Lactic acid. The wine lagering is very obvious. Very sharp-tart, almost spritzy carbonation. Very nice, if a bit agressiver sour - but certainly not too acidic.

UPDATED: MAY 9, 2019 Bottle at blabaer line. Hazy golden body with a small white head. Funk, lemon, orange peel, slightly vinegar in a good way, fruity.

UPDATED: DEC 8, 2018 375 ml. green bottle. Clearly a geuze inspired blend of 1, 2 and 3 year old sours from Side Project. Pours lovely bright apple golden. You can hear the high carbonation, bubbles rising visibly very quickly and the head fizzes away. Nose is nice dried old orange peel, low cellar, lemon, nice faintly dirty and touch bright lemon funk, very low medicinal funk, far more old orange but it actually approaches lambiek funk, bright, crisp, very faint cellar. Good lively carbonation. Very tasty lemon, bright and round with Asian pear, incredibly drinkable, superbly fruity lovely funk, lemon (low esp. by USA standards), pear, orange, mandarin, tangerine, white grape, sourness is actually quite low just a small touch helping, carbonation is lively but not sharp, massively juicy. Kind of everything about this beer works. Top tier USA sour in my opinion.

Pours almost clear light golden with low white head. Aromas very nice and slightly tart and funky of pears, apples, grapes, citrusy fruits, barnyard. Taste has notes of over ripe apples, grapes, pears, citrus, hints of winegums, guava. Mouthfeel has a brilliant balance between sour tartness, hoppy bitterness and funkyness

[5/9/18] Bottle at Himmeriget in Copenhagen. Slightly hazy golden. Funk, cobwebs, oak, vinegar, fruitiness, wine, dry, sour, lemony, puckering, bitterish note, juicy, medium-bodied, lively carbonation. Great stuff.

Bottle. Shared with the RB Crew on the 09/05/2018 at "Himmeriget", Copenhagen. Hazy golden, almost orange, colour with a small white head. Aroma is funk, apples, oak barrels, citrus peels and hay. Taste is medium sour with intense touch of oak barrels and grapes. Tart fruity finish. Lovely aftertaste. Well balanced. Next one please!
