UPDATED: NOV 19, 2021 750ml bottle. Pours a hazy, dark pinkish red color and capped by a small off white layer of foam that settles to a thin film. The aroma shows notes of tart plums, crisp wheat, saison yeast, and dark red fruit over a pale and wheat malt base with notes of vinous oak, tartness, and low acidity. The flavor follows suit with notes of tart plums, wheat, and pale malts to go with the red wine vinous oak, saison yeast, and a firm tartness on the back end. Medium bodied with ample carbonation that leads to a mostly tart plum, crisp wheat, and vinous oak on the finish. Really damn good stuff with very low acidity and great plum flavor. Awesome stuff here and one of my favorite of this series.

UPDATED: JUL 26, 2021 Bottle. Murky pinkish pour with a white head. Sour fruit bouquet. Mildly sour fruit (I assume plum), and muted barnyard notes. Not very nuanced but pleasant and easy drinking. Average body and mouthfeel.

UPDATED: JUL 2, 2021 750 mL bottle. Cloudy purple. Smells of plum, mineral notes, and fruity yeast. Tastes of lightly tart plums, lots of basement yeast funk, mineral flavors, earthy back end. Medium body. Pleasant and light acidity. Nice.

Bottle at Side Project. Pours a cloudy purple with small off white head that diminishes to nothing. The aroma is plum skin, oak, funk. Thin body, plum, cherry, oak, light acidity, enjoyed this.

Enjoyed at the brewery with ebone1988. 750 mL bottle, Blend #1. The pour is a darker pink ruby with a thin off white head that falls to a bubbly collar and leaves a spot of lace. The aroma is beautiful. Bright and delicate plum skins and sour. Oh baby. Big time sour plum. Light sweeter wheat and funk underneath it, but the plum is the star. The flavor is much of the same. The bright plum skins are magical. The wheatiness and a hint of plum flesh come through and the skins tie it off. Eff me. The mouth feel is light bodied and crisp with a bright carbonation and a lingeringly heavy sour plum and delightful crispness. Oh man. This is great. 9 4 9 5 18

Bottle at the brewery with koleminer20. Aroma is jammy plum, tart, funk, barnyard, amazing. Appearance is pink ruby, cloudy, white head. Taste is jammy plum, tart, funk, barnyard, white wine, wood, perfectly balanced, absolutely fantastic. Mouthfeel is light to medium body, light crisp carbonation, plum skins tart funky amazing aftertaste. Overall, Jesus fuck this is incredible.

750 ml bottle at the brewery. Pours a hazy salmon color with a minimal pink-tinted white head that never amounts to much. Plenty of plum character throughout, tart and a little sweet, also suggesting grapes and blueberries, with oak, vanilla, florals, and funk. Light-medium bodied, with modest carbonation and a tart, fruity, funky mouthfeel that finishes dry. Another really nice entry in the Fermier family.
