UPDATED: JAN 7, 2022 (Bottle, sample, 0.75 l - blend 6, at Pien Shop, 20220107) The beer poured deep golden and hazy. Its head was small and white. Aroma had fruitiness, spiciness, wood, sourness and ripe fruits. Palate was medium bodied and dryish with medium carbonation. Flavours were fruitiness, spiciness, wood, sourness, some vanilla, ripe fruits, tartness and bitterness. Aftertaste was fruity, tart and bitter. A delicious complex brew.

UPDATED: DEC 5, 2021 Flaska från Side Project. Blend 11. Ljusguldig, en gnutta disighet, vit krona. Fräschör, citrus, bra med syra som sitter mer på djupet än på ytan, fat. Mycket gott.

UPDATED: NOV 26, 2021 750 ml bottle from John, thanks man, 11/26/21. Unclear yellow, white head. Aroma is full of funk, with wood, earth, lemon, and wheat. Tons of complex, funky flavor here. Nice, dry close. Quite good.

UPDATED: SEP 10, 2021 Bottle sample at a tasting. Hazy golden with white head. The aroma has notes of funk, wood, flowers, tea, almonds. The flavor is sour and mild bitter with notes of funk, wood, lemon, flowers, earthy. Dry, medium-bodied.

UPDATED: JUL 31, 2021 Bottle at a tasting. Batch #7. Cloudy yellow orange color. Aroma is phenolic, spicy, funky, Brett, floral. Sour, funky, lemony, apricots, grapefruit, green apples, lactic, wood. Medium-bodied, dry. Superbly balanced, great.

UPDATED: MAY 12, 2021 Bottle. Pours slightly hazy gold yellow. Lemon, light pineapple, lime, grapefruit, hay, lemongrass, minerally stone fruit skins. Medium body. Good.

UPDATED: APR 30, 2021 750 ml bottle. Pours a lightly hazy golden color and capped by a thick off white layer of foam that settles quickly to a thin film and coats glass in lacing. The aroma shows notes of vinous white grape, crisp wheat, grains, hay, and funk to go with a pale malt base with some oaky tartness. The flavor follows suit with notes of vinous white grape, oak laden funk, crisp wheat, and Chardonnay oak with the old grains, pale malts, and firm tartness on the back end. Medium bodied with ample carbonation that leads to a slightly bitter sweet and tart Chardonnay grape, old oak, and crisp wheat on the finish. This is a really nice and easy drinking barrel aged saison with nice white grape notes. Really good stuff.

UPDATED: APR 25, 2021 From a bottle shared at my house. A fairly clean yellow pour followed by some funk in nose and taste and white wine

UPDATED: APR 5, 2021 Blend # 10, shared 750 ml. bottle poured to a small snifter showing a lightly hazed, golden tone, with a decent layer of soft white froth, and foamy spots of lacing. The nose was dried fruit, white wine, funk, and mild, wheat-like graininess. Light to medium bodied, the taste was a balanced presentation of similar notes, elevated by some lively spritz, light, lemony tartness, and subtle dryness to the finish.
