Saisons commonly have spicy flavors from the unique combinations of malt, hops, and farmhouse yeast used to make them. This take on the classic rustic ale gets an herbal boost from the use of native California white sage, grown on the grounds of the abbey of New Clairvaux.

Mr.Spooks (4080) - Tennessee, USA - SEP 16, 2018
Nose features a lovely mix of classic saison grass-n-esters with a healthy dose of sage. And, while this prominence might be a bit worrisome, the herb never grows aggressive or overpowering in the taste; a mild freshness pops up on the back end, but melds nicely with the clove and fruity sweetness on the front end, while adding a slight herbal bitterness on the fade. Apple and gentle citrus notes are laced with banana, straw, and grain, and the finish grows spicy and somewhat dry. Pours orange-gold with a brief white head and almost no lace. Texture seems a tad slack, accented by the slightest alcohol warmth. Overall not a classic, but easy to enjoy.

Bottle. Pours clear gold to amber with a medium white head. Nose of malt, sage and citrus. Sweet malt and sage flavor with a malty and herbal finish. I like.

APPEARANCE- dark golden straw color, clear. NOSE- I could smell the sage from across the table when the bottle was opened. It's the only thing I smell off the beer. FLAVOR- similar to what you'd expect for a saison (leaning towards Belgian in my tastes). Sage comes through well and it 'freshens' the beer, but it's not overdone.

11/05/2017 (750ml corked and caged bottle): Very spicy and sage-o-riffic aroma; cloudy golden orange color with a large, fluffy, beige colored head, nice lacing; malty and sweet up front with some bread crust and biscuit, very herbal with a quite a bit of sage but not over the top, yeasty finish, slightly fruity/dried fruits and peel, fermented lemons, earthy, spicy and pepper as it lingers on the tongue, strong but too alocholic; medium to medium-full body, substantial mouthfeel; quite good, very good herbed beer, I like it a lot.

Pours clear, deep gold into a Trappist glass. Bright white head with medium retention recedes to hug rim. Caramel and sage aromas. Dry with sweet grape, hay and sage upfront turning to hot caramel and earth in the lasting finish.

This Ovila variant is appropriately spicy and herbaceous for a Saison brewed with sage. This lively golden brew propels yeasty and herbal aromas: funky phenols, sage, and white pepper. The flavor blends earthy yeast with lots of savory spice. Happily, the spiciness doesn’t take away from old-world farmhouse qualities of this brew. There’s a light, tangy acidity toward the finish. I’ve had a handful of Saisons brewed with sage, and this version of Ovila is just as tasty as the rest.

Terminus (3784) - Centennial, Colorado, USA - MAR 23, 2017
Bottle Pours bright orange huea with a nice fizzy white had and sparse lacing. Nose is full of sage, spritzy yeast quality, lite phenols, lite grassy notes, maybe a hint of lemongrass/corriander. Flavors exhibit alot of spice, especially the sage, its almost over powering however, there are other notes there-phoenolic spice, mostly GOP and coriander. Some lite grassy notes in the finish with a touch of pale belgian malt slightly toasted grains. a rather complex brew but i think the sage flavors are a bit too strong. A decent experiment nonetheless.

Bottle/Fest. A- Cleaner, soapy, lavender, sage. A- Yellow color, hazy liquid, white head. T- Spices, lemon, yeasty, mildly sweet. P- Medium body, average texture, average carbonation, spiced finish. O- The sage is there but there are also a load of other spices. Tastes like cleaner. Really bland actually.
