COMMERCIAL DESCRIPTION
This project began in late 2015, when we wondered just how far we could push the kettle sour. We scaled up a fairly simple recipe to imperial level and brought in some fresh Bourbon and Red Wine barrels, which began to layer up flavour on top of the super-sour base. Expect waves of acidity with tannin and berry jam notes shining through.

UPDATED: MAY 9, 2019 Bottle of 33cl, in a Tulip glass; from the fridge. A really nice discovery : it smells like an Oude Bruine, taste like it, but it isn't. Really nice beer, will definitively drink again.

Backlog from CB2018. Pours a hazy amber with a small white head. Tart berries, dark forest fruits, light vinegar, caramel, vinous notes, oak, vanilla sweetness, bit of spicy booze and some deep funk.

In de Wildeman @ Brettfest 2017 The aroma has tropcial fruits, berries, some bourbon. Bit hazy, amber coloured beer with a thin, white head. The taste is light sourish, bit tart, with berries, tropics, toffee, some hint of vanilla and a hint of manure/leather/whatever. Medium bodied. Mwoah.

Bottle from Cotteridge Wines, Birmingham. Poured a hazy medium amber with a very short-lived fizzy white head. The aroma is malt, tart fruits, woody, alcohol, dry vinous. The flavour is moderate sour with a light, crisp, acidic, tart fruit, dry oaky vinous palate. Medium bodied with lively carbonation up front and and almost nothing thereafter. Some molasses and vinegar in there too. Not sure what all the fuss is about really. Nothing special, but in fairness it was a few months over date.

Extraordinary and specific. Super-sour and many hints of berries, though some bourbon hints present. Intresting all the way.

UPDATED: NOV 3, 2017 Amber, not quite clear pour with a thin layer of a head. This is a real mindbender, aromawise that is. Roasted malts, horse stable, funky yeast, citrus fruits, really gueuze like, balsamic vinegar, tart berries. Immensely complex smell. Taste of sweet roasted malts and caramel at first, and then an explosion of sour and tart flavors. Berries, vinegar, citrus, granny smiths. Great champagne like mouthfeel. Awesome magnificent brew. Extremely complex and mouthwatering. Not for everyone, but I still highly recommend it to every beerlover!!!
