No head, slightly cloudy golden color. Aroma is dry sour-ish mineraly, oak, apple peel, thinner, sour apples, minerals, hay, bark, apple cores. Taste is dry sour-ish fruity, mild vinegar, sour apples, oak, sorrel, apple cores, citrus acid, apple peel, flowers, minerals, thinner, fruit stones. Medium bitterness, dry sour-ish fruity mouthfeel. Fair enough.

UPDATED: FEB 21, 2021 Bottle. Unclear golden body with floaters and practically no head. Strong apple aroma, quite acidic with cellar notes. Taste has relatively mild apple flavor, quite acidic, dry, some wood and slightly funky. It’s actually a bit vinous in taste with a subdued apple taste, hint of white sour berries and grapes. It’s a lot of thing going on here. Medium body and refreshing, acidic aftertaste. Ending a bit like a bone dry cidra from Basque Country. Interesting stuff.

UPDATED: FEB 8, 2021 Bottle, 75cl. #4 2018. A lightly hazy straw colored cider with lots of floaties. Still. Funky aroma, leather, barnyard, cellar, apple and a spiced note. It’s dry on the palate, with some carbonation. Apple, funk, barnyard, hay, grass and some spiced notes in the flavor. Vinous cellar notes, and a lasting finish. A very pleasant one indeed, complex and tasteful. 210205
