COMMERCIAL DESCRIPTION
Off-dry. Sparkling. High in both tannin and acidity from a blend of bittersweets and sharps. Fruit forward with the slightest hints of barrel on the nose and more on the finish.

Stemmmed wine glass. Lingering foam. Clear pale gold.
Faintly bitter apples, clay & something like pine.
Rounded, but strong acidity. Floral, lingering rindy bitterness, sweet finish. Mild tartness is a slight disappointment. Light, effective wood, honey, tight carbonation. Thin, but with a great laquer-ish quality. Light weight, evaporative quality that is hard to describe.
Very good.
Howler from Cellar D’Or. Caramel, oak, maple syrup, and rose blossom aroma. This is my kind of off-dry cider, with enough prickles, acidity, and tannin to keep it alive and going. The soft lactic tartness is elegant and smoothing. The middle flavor holds a nice mix of browned sugar, as bit of cheddar-like age, pineapple, and coconut. Delicious through and through. And balanced. I believe this is the best off-dry cider I’ve ever had.
