COMMERCIAL DESCRIPTION
Postscript is a tiny little country beer brewed with biodynamic and unmalted spelt grown by Hawthorne Valley in the north of the county. We are honored for the opportunity to turn these grains into beer! Postscript was delicately dryhopped with Crystal, spalter select, and Amarillo hops before bottling, lending an appealing and unique fragrance. Notes of pineapple, chamomile and sweet spring flowers, kiwi, and underripe white peach. Subtly juicy, yet crystalline and vinous.

UPDATED: AUG 21, 2021 Bouteille. Robe jaune, trouble, peu scintillante, effervescence active. Fine mousse blanche homogène. Tenue de mousse éphémère. Arômes: poivre, gazon, muscat, vineux, boisé, minéral, zeste de lime, céréales, soupçon rustique. Saveurs: fine acidité en bouche, finale assez sèche. Texture: coprs mince, carbonation faible, léger tanins, très bonne buvabilité.

UPDATED: AUG 20, 2021 750 ml bottle from the brewery, 8/20/21 (bottle Dated 9/20). Unclear golden pour, white head. Continues to fizz in the glass well after being poured. Pepper, funk, wood, and a million other things. So much farmhouse goodness here. Zesty lemon. A good bit of grains and grass as well. Nicely tart. So much flavor, so much going on, but in a perfectly delicate manner. Complex, but not at all pretentious. Excellent stuff.

UPDATED: APR 24, 2021 Bottle thanks to Brian. Pours a hazy yellow gold with medium white head that lasts. The aroma is floral, lemon zest, chamomile tea, wheat. Thin body, mineral, oak, funk, lemon zest, chamomile, light dry finish, very nice.

UPDATED: OCT 9, 2020 bottle thanks to vin. Mostly clear yellow, small white head, good residual. Aroma is delicate, bugs, oak, grain, lemon. Flavor is light tart, light funk, delicate, lovely. Light body. Amazing.

UPDATED: MAR 7, 2020 Bottle at home in Hackney - picked up via trade. Pours mostly clear yellow-gold with a foamy, pure white head. Beautiful beer, lightly sweet, with clean lemony tartness, some oaky dryness, restrained funk, nips of grass and straw, salt. Light bodied with massaging carbonation. Tart, quenching finish, with subtle acidity, nips of citric bite, engaging funky notes. Lovely.

On tap at the brewery. Hazy yellow, big fluffy white head. Smells of lemon acidity, wheat, and a little barnyard funk. Tastes tart. Lemon, a bit of lime too. Wheat malt profile. Just a little bit of yeasty funk in the finish, but it's less prominent here than in the nose. Light body. Crisp. Simple. Excellent.

My Bottom Line:
Peppery hops, white flowers, citrus fruit and rustic cereals coalesce in this airy, dry and bitter Saison.

Further Personal Perceptions:
-A healthy head of foam sits atop the misty straw gold.
-Drinkability is very high.
-Countryside character is prominent.
-Mild acidity seals each sip.
-If this came from Belgium, it would get loudly lauded.
