COMMERCIAL DESCRIPTION
10-12% Mixed Fermentation Ale Brewed in Spruce Serve at 55 degrees SAHATI is our interpretation of traditional Finnish sahti. Starting with a 200-year old Engelmann spruce tree felled on brewery property, we created our own kuurna (an ancient Scandinavian lauter tun) to separate the wort from the grain during brewing. The bottom of the kuurna is layered with spruce branches; the needles act as a natural filter and impart resinous oils into the wort. The hollowed-out trunk of the tree also contributes spruce essence and structure from the raw wood. The beer is made of barley & rye malts along with a sparing addition of Goschie Farms Cascade hops and is brewed just a few times per year.
 SAHATI is in many ways the very definition of The Ale Apothecary, where complex flavors arrive from the very methods used for production…the result is the process impacts the flavor profile at least as much as the ingredients themselves. Batch Mar 08 2018: 9.29% ABV Wild Fermentation Ale Brewed with Spruce Needles & Honey, Aged in Wine Barrels. Our spectacle ale, inspired by traditional Finnish Sahati but brewed with typical American disregard for such things. Mashed overnight in an oak vat, Sahati is made of Mecca Grade Vanora and Rimrock rye malts, aged Goschie Farms Cascade hops, water from our Skyliner aquifer, and microbes & spruce boughs from our surrounding forest. Open fermentation occurs in wooden vats prior to aging in Oregon pinot noir barrels from Domaine Drouhin. Over a year later, Sahati is transferred to a large barrel with fresh spruce boughs prior to bottle fermentation with Oregon honey. Bottles are aged 6 months minimum in our cellar prior to release.

UPDATED: MAY 29, 2021 Pours hazy dark amber with a two finger, light tan head. Aroma is juniper, lacto, honey and spruce. Taste is honey and juniper, moving to tartness, wood and red wine. Finish is honey, tartness, red wine, juniper and spruce.

UPDATED: JAN 23, 2021 Une dinguerie. Le nez dégage tout de suite quelque chose de très floral. La bouche est fabuleuse, résineuse, florale avec toutes les saveurs de l'épicéa qui enrobent le palais. Il y a un côté un peu sève qui apporte du corps et de la structure. C'est infiniment complexe, magique.

UPDATED: JAN 9, 2021 375ml bottle – Pours an almost clear dark reddish amber colour with a tiny off-white head that settled to a thin film. Aroma is tart fruit, berries with notes of honey and spruce. An initial sharp tart taste, quite a lot of flavours follow, sweet honey, spruce, tart fruit, berries and vinegary flavours with a dry sour finish. It’s not Finnish so not Sahti but an interesting sour all the same.

UPDATED: OCT 17, 2020 Bottle at share: pours brownish with fizzy head. Aroma is loads of spruce. Aroma is winy, loads of spruce. Taste is very acidic, spruce is not as well represented, but does make a nice appearance in the finish. Nice taste, but too acidic for me. Does not seem very similar to the real deal.

UPDATED: SEP 24, 2020 Sahati Bottle ordered from Ghost Whale, Putney. Aroma of fruit, berries, honey and spice with a vinous edge. Opaque amber. Thin creamy off-white head, retreats to the rim. Ooph. That was far tarter than I was expecting. Vinous and red berries. Real sharp edge to it. As I I acclimatise to it the honey sweetness comes through. Medium bodied. Slick. Flat carbonation. High astringent finish. Dry too. It's a sour. The Sahti inspiration seems to have been lost in translation, although with this tartness I'm using my sisu to get through it.
