UPDATED: DEC 26, 2021 December 25, 2021 - original bottle from 2008 poured into my Bruery 12 Days Collection glass. The culmination of a decade plus long journey. Really hard to believe that the day has finally come. Dark pour with limited head, but did foam up with a swirl. Aroma is still potent after all these years with a lot of dark fruit, some sweetness and spice. Taste was very fruity, almost like grape juice with the sweetness and mild spice. Cheers to the beer that started it all and has held up well after 13 years. Alas, all good things come to an end, this was a fun ride.

UPDATED: MAY 17, 2021 Bottle. Moderate roasted and caramel for the malt, light cooked orange, light dough for yeast, with date, dried fig and faint baking spices in the background. Head is average sized, frothy, light beige, with spotty lacing, and is mostly diminishing. Color is medium brown. Flavor starts moderately sweet and lightly acidic, then finishes moderately sweet, lightly acidic and slightly bitter. Palate is on the heavier side medium, oily, with a lively carbonation and a lightly tart finish. Nice Quadrupel, good flavor, but could have been a bit bolder in aroma

UPDATED: APR 23, 2021 Bottle. Pours a deep dark copper brown with a nice tan head. Aroma of dark fruit, toffee, caramel and yeast. Flavor was rich, sweet and full bodied with toasted malts, caramel, dark fruit, candi sugar, raisins and toffee. Quite good.

UPDATED: DEC 21, 2020 Deep plummy amber hue with a large foamy light beige head. Nose is semisweet and earthy with estery Belgian phenols mixed with toasty plummy malt, a hint of spiced date, pear, and palm sugar. Rich full flavor that’s loaded with dark fruit and notes of caramel and fig and Graham cracker crust, a bit of booze and Belgian yeast phenols and lingering cobbler like tones. Intricate and layered, rich and boozy.

UPDATED: DEC 12, 2020 Pours translucent sienna with a thick and fairly persistent fawn head. Aroma yields candi, toasted malt, spice, caramel, subtle hoppy and woody tones. Flavor features candi, nutmeg, cinnamon, clove, other spices, toasted malt, dark fruit and woody hop tones. Texture gives good firm body and peppy fizz with a dark and woody finish. Whatever you celebrate this time of year, may it be fun and joyful!

UPDATED: NOV 28, 2020 Dark copper with a small head that doesn't last. Aroma is heavily spiced with notes of caramel, dark fruit, yeast, sugar, fig, toffee. Medium to full bodied, spicing dominates everything, other quad notes present. The balance is terrible and the spicing bludgeons your palate. It's like taking a pass/fail course in college, getting a C+ and thinking 'nailed it'

UPDATED: JUN 13, 2020 Poured from an original 750 ml bottle. Aroma is malt forward with lots of caramel and toffee as well as lighter toasted bread notes and some candi sugar. Light alcohol spice. Light Belgian yeast esters and phenolics - a bit fruity with light clove and coriander notes. Some raisin, cranberry and cherry notes. Moderate oxidation with a bit of sherry and cardboard notes. Pours a murky, auburn-brown with amber hues on the edges and a medium thick, medium sized, dark tan head that recedes steadily to a small film that lingers on the edges. Light lacing and fairly long legs. Flavor is somewhat sweet with quite a bit of caramel and toffee with lighter notes of toasted bread and candi sugar. Some raisin, date, prune and cherry notes. Medium light peppery, coriander phenolic notes. Light alcohol spice. Moderate oxidation that really lingers in the finish with honey, sherry and one wet newspaper / cardboard. Mouthfeel is medium full bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, this is better than expected considering the age. The oxidation isn't great, but I wonder if this will get much worse considering where it's at now. New 375 ml bottle is less oxidized, but I kinda like the roundedness of the older bottle. I'd say this beer is best with a few years on it.

UPDATED: MAY 21, 2020 Sample at Bob's Bar during the 'Bruery Almost 12 Beers Of Christmas Night!' event on 12/05/2019. Dark reddish-brown color with a medium bone white head that diminishes steadily to an outer ring. Small patches of lace. Yeast, dark fruit and malt in the nose. Full-bodied with flavors of Belgian yeast, dark fruit, caramel malt and a bit of spice. The finish is spiced fruit and yeast. Pretty good overall.
