COMMERCIAL DESCRIPTION
Blend of 1-2-3 year old lambic from various producers. Typically: 50% 1-year old lambic, 30% 2-year old lambic, and 20% 3-year old lambic. ABV varies (has been 6.4% for example). Draft version is separate entry since it is totally different blend: it contains Meerts (low ABV lambic), 1 and 2 year old lambics (no 3 year old lambic). 2019-2020 description for example: "The Gueuze Tilquin à l’ancienne (7.0% alc / vol) is a spontaneous fermentation beer obtained from the blending of 1, 2 and 3 years old lambics. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 6 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon. The taste is tart and dry but has a certain roundness that makes this Gueuze à l’ancienne particularly accessible for non-experts. It will also delight fans of the genre for its sweet complexity. It also has a slight dry bitterness because of the youth of the oak barrels used, as they still release some tannins. It has a fresh lemony nose."

UPDATED: JAN 1, 2022 Orangée, très légère mousse. Nez vinaigré, un peu acidulé vert, vieux fut, citrique . Gout vinaigre doux puis acidulé sur les fruits verts, rafle raisin, vieux fut, citrique, note brett et cuir... super nickel!

The aroma is a bit perfumy with some lavender, lemons, roses, brett and thyme. The taste is complex with sour citrus, herbs, oakiness and touch of garbage pail. The palate is full and viscous. UPDATED: MAY 2, 2021 Vintage 2019/2020. Orange color, with a nice big white head, slowly disappearing. Aroma is citrus, sour apples, leather, sulphuric. Very lemony taste, sour. Extremely refreshing, dry and bitter finish. Beautiful geuze.

UPDATED: FEB 27, 2021 12.7 oz corked bottle. Pours a pretty honey color with a dense white head which dissipates. Big sour lambic smells of vinegar and yeast. Nice toothy sour apple and wine vinegar flavors with a hint of barnyard and a wonderful tangy finish. Good gueuze.

UPDATED: FEB 15, 2021 Znakomite, złożone, intensywne, wyjatkowe piwo. Bardzo charakterystyczne, dzikie nuty w aromacie, dużo też owocowych nut, kwaskowych. Bardzo rześkie ale jednak przede wszystkim 'dzikie'. Bardzo ładna, jasno pomarańczowa barwa i niewielka piana oraz lacing. W smaku bardzo rześkie, mocno dzikie i też mocno owocowe, gładkie, dość pełne, bardzo żywe. Na początku dzikie nuty i dużo kwaskowych owoców, finisz mocno wytrawny, nieco winny, cytrusowy. Bardzo długo zostaje na podniebieniu. Bardzo intensywne i interesujące piwo.
