COMMERCIAL DESCRIPTION
The Seesaw series is our gose playground. Designed to capture delight and fun in the form of an easy-drinking and flavorful beer. Each Seesaw has a unique fruit addition to pair with balanced tartness, a touch of salinity, and ABV on the lower side. The nostalgic thrill of warm-weather fun, reimagined in one of our favorite styles. The number of Seesaws dictates once, twice, or three times the fruit added.

Double Seesaw: Raspberry is our first release in the series. Pouring a royal garnet hue of dark maroon, captivating aromas of fresh raspberries swirl to the nose leading to a palate reminiscent of homemade summer mixed berry jam. Refreshingly tart with a balancing salinity, this beer has a medium mouthfeel with a clean finish.

UPDATED: DEC 29, 2018 16oz can. Pours a beautiful dark berry red color and capped by a thin pink head of foam that dissipates quickly and rejoins the body below. The aroma is amazing showing notes of fresh, tart red raspberries, crisp wheat, saltiness, lactic sourness, and soft pale and biscuity malts. The raspberries are very juicy and jammy and add ample acidity throughout. The flavor follows suit with the tart and juicy raspberries front and center giving nice acidity and jammy notes followed by crisp wheat, and a lactic sourness throughout and backed up the soft biscuit malts and a nice salinity from the salt on the back end. Light in body and smooth with ample carbonation that lends well with the bright acidity and leads into a crisp, tart raspberry and salty finish. Super refreshing, perfect level of tartness, and incredibly drinkable stuff. Just an awesome fruited Gose. Need to try more of these.

Fruit Gose by Trillium, curious to find out how well these NEIPA masters perform at something altogether very different. Pale lilac, moussy, quickly opening and thinning head, cloudy deep purplish fuchsia robe. Aroma of bright ripe red raspberries, raspberry vinegar sprinkled over a fruit salad, salted beetroot, tomato purée, sourdough, cassis, rhubarb, sesame seed. Sharp unripe raspberry sourness in the mouth with a core of ripe raspberry sweetness hidden within, but the acidity prevails; softly fizzing carb, sourdough-like 'soil' dried by the sourness and drenched in bright fruitiness with only a light salty touch towards the end; wheat soapiness and strong fruit acidity dominate the finish, drying, with a lovely, cracker-like raspberry seed tannic touch to it. This is what it intends to be: a modern, 'Americanized', clean and streamlined fruit sour with a pinch of salt added - Gose the 21st century way, but within that idea, very well executed indeed.

Intense, cranberry-raspberry-blood red fruit colored body is moderately hazy/cloudy. Pinkish-tinged head is medium-sized, falling to a ring steadily.
Nose is jam-packed with fruit, as the Seesaws seem to be. No part of the raspberry has been spared, leading to tart, juicy, seedy notes, very fresh and authentic and a healthy wheat-like biscuity character behind it. Malts are quite sparse otherwise; there isn't any real sweetness here, though the wheat does soak up/balance the acidity, to some extent. No out-of-place or overdone lactic notes and no alcohol or flaw. Very intense, high aroma strength.
Juicy and very tart in the mouth, mostly due to fruit acidity. The raspberry juice/jam flavor is almost coating the mouth. Soft wheat lies behind it, with very tight carbonation and puckering acidity still lingering on the finish. Very high attenuation with little/no malt sweetness remaining. No alcohol or flaw and a real ode to the raspberry. Like all Trillium goses (and most American goses) there's no real salinity noticeable. The raspberry is amazing but it would be nice if there was a little more to this than just raspberry.

Can at home in Hackney - picked up at the brewery. Pours deep, unclear blood red with a modest, fading pink froth for a head. Lovely, luscious tart raspberriesabound, with sturdy acidity, quenching tart bite, lemon. Medium bodied with spritzy carbonation. Clean finish, more bracing tart raspberries, low bitterness. Great stuff.

Bright reddish purple from the can. Huge jammy fresh raspberry nose and flavor. Almost as sweet as it is tart. The only thing lacking is the salinity, a little buried under the rest, otherwise would have scored even higher.

Can shared with Brendan, Andrew and Ellen. Pours a deep purple body with thin pinkish/white lace. Nose is rich raspberry jam, sweet marmalade and fruit seeds. Mouthfeel is medium bodied - not really juicy as it has a nice balance from the tart fruit character and gose salinity. Really liked this one.
