COMMERCIAL DESCRIPTION
IPA Primitif– Ever had an extremely hoppy sour beer before (sour, as in Lacto… Bretta does not create sour flavors)… The answer is NO! You have never had a super hopped sour beer, because the microbes that make the ’cheek puckering sour’ are extremely sensitive to hops! We’ve figured out a method to get around these sensitivities and developed a 100 IBU brew fermented with Lacto and Bretta, aged in barrels, and then dry hopped.

This Third installment in our Office Space themed ’Case of the Mondays Series,’ uses a unique double fermentation (warm with Lactobacillus delbrueckii in the kettle then cool with a special Bretta). This sour/wild beer is extremely hoppy, barrel aged, and dry hopped. Focus of this beer is decidedly fruit (think ruby red grapefruit), from the choice to use mosaic hops, citra hops, Amarillo, coriander, and tangerine zest.

UPDATED: NOV 6, 2020 Draught. Pours hazy orange with a medium, creamy white head, medium retention. Moderate lactic stone fruit, medium-light bread malt, mango hops, light hop bitterness, medium-high acidity and a dry finish. Medium-light body and medium carbonation.

UPDATED: JUN 24, 2019 Waxed 12 oz bottle. Aroma is pungent sour cultures and brett, lemon, some herbal hoppage, light oak. Pours murky burnt orange with sediment on the bottom, and a one finger beige head that falls into a ring somewhat quickly. Taste is highly sour (10/10) and a bit savory, finishing with a light dryness. Not really getting any bitterness for a label boasting of 100 IBUs. Flavors of lacto, brett, lemon, oak; coriander is just a bit noticeable as a lingering flavor on the back end. Intense and good, especially for something with such a low ABV.

Orange color, small white head. Some sediments. Aromas of tangerine peel, sour candy, white wine, sugar and some toothpaste(?). Tart taste with citric acid, tangerines, white wine, brett and earth. The toothpaste aromas is weird, but overall good!

Pours cloudy golden with low white head. Aroma of grass, green grapes, apples, light funk, hay. Taste is medium tart, grapes and unripe apples, mellow fruit sweet finish. Bits of citrus fruit as well. Light and crisp body with soft carbonation.

Pours light hazy golden with a moderate frothy white head. Aromas of peach, caramel, marinated fruit, resin. Taste is very fruity and quite sour with caramel notes. Mouthfeel is light bodied with moderate carbonation and somewhat dry.
